White Chocolate Pumpkin Bread
White Chocolate Pumpkin Bread is superb. We love pumpkin bread in our household. Now that fall is here, it is certainly time to bring out the pumpkin recipes. This lovely bread is filled with white chocolate chips and glazed with white chocolate icing. That in itself provides amazing taste. But the true secret ingredient to this spectacular bread is coconut cream pudding and pie filling mix that’s added to the batter. Then it gets an extra crunch from walnuts. Wow!

I was adding recipe cards to some of my old Pumpkin Bread recipes last week and realized all the pictures were deplorable. So I remade the five different pumpkin bread recipes I had posted two years ago and then added this one, as well. I sent the breads out on plates with a little bit of each bread on each plate to John’s office earlier this week. I have had rave reviews ever since. In fact, his office staff told me they want me to remake lots of my old recipes so they can have samples! 😉
As I noted earlier, I love our Melt-In-Your-Mouth Pumpkin Bread. Even without all the extra chips and glaze it’s still wonderful. I’m not sure which one is my favorite. I like all of them! Several of the gals at John’s workplace said the Pumpkin Butterscotch Bread was their favorite. I also heard rave reviews over the Pumpkin Snickerdoodle Bread, the Pumpkin Chocolate Chip Bread and the Chocolate Butterscotch Cinnamon Pumpkin Bread. Each one of these Pumpkin Breads are fantastic. So is this White Chocolate Pumpkin Bread. White chocolate adds a superb flavor that’s different from regular chocolate chips.

White Chocolate Pumpkin Bread is scrumptious.
Our family loves pumpkin bread and this one is sure a terrific option.
Each bite of this fabulous bread is filled with white chocolate chips, walnuts and topped with a white chocolate glaze.
Here’s what I did.
I used these ingredients.
Place pumpkin in a large mixing bowl. Add cinnamon, salt, baking soda, eggs, and oil.
Mix with an electric mixer until well combined.
Add sugar, coconut cream pudding and pie filling mix, and UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add walnuts and white chocolate chips.
Stir everything together until well combined.
Spray a 9×5″ baking dish or 3 miniature loaf pans with Baker’s Joy cooking spray. Pour bread mixture into prepared dish.
Bake at 350 about 1 hour and 15 minutes. Cool completely before applying glaze.
Melt remaining white chocolate chips in saucepan over low heat. Add milk or cream.
Stir ingredients until mixture is smooth. Remove from heat.
Drizzle white chocolate glaze over cooled pumpkin bread.
Slice down and serve.
After making a batch of this bread, prepare to drool!

WHITE CHOCOLATE PUMPKIN BREAD
(My own concoction)
White Chocolate Pumpkin Bread
Equipment
- 1 9x5" bread loaf pan
- 1 large mixing bowl
- 1 nut chopper if the walnuts are not pre-chopped
- measuring cups
- measuring spoons
- 1 wooden spoon
- 1 electric mixer
- 1 small sauce pan
- 1 bamboo skewer or knife to check bread for doneness
Ingredients
PUMPKIN BREAD:
- 3/4 cup cooking oil or avocado oil
- 1 cup pumpkin
- 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 cups granulated sugar
- 1/3 cup walnuts chopped (measure after chopping)
- 1/2 tsp. cinnamon
- 1 small box coconut pie filling instant or regular
- 2 large eggs
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 12 oz. bag white chocolate chips divided use
WHITE CHOCOLATE GLAZE:
- 1 cup white chocolate chips
- 2 tbsp. cream or milk
Instructions
PUMPKIN BREAD:
- Mix oil, eggs, and pumpkin, cinnamon, salt, and baking soda.
- Mix with electric beater until smooth.
- Stir in flour, sugar, coconut pudding and pie filling mix, 1 cup white chocolate chips and walnuts to pumpkin mixture.
- Pour mixture into a 9x5x3” greased loaf pan or 3 miniature loaf pans.
- (I spray them with Bakers Joy cooking spray, otherwise use shortening and flour).
- Bake at 350° about 1 hour and fifteen minutes or until knife or bamboo skewer inserted in center comes out clean.
- Makes 1 9x5” loaf or 3 miniature loaves.
- Cool completely before adding white chocolate glaze.
WHITE CHOCOLATE GLAZE:
- Melt chips and cream over low heat in small saucepan until smooth.
- Drizzle over cooled loaf.
