Bacon Stuffed Cherry Tomatoes

Bacon Stuffed Cherry Tomatoes are the BEST! I mean it. They are tomatoes to drool over. This fabulous 5-ingredient recipe consists of bacon, green onions, cherry tomatoes (the larger the better), sour cream and Miracle Whip. That’s all. Yet, it is one of the most scrumptious appetizers you’ll ever taste. It’s certainly great for tailgating parties or the Super Bowl!

Many years ago, we attended a wedding where the bride and her family catered their own wedding meal. I still have Grace’s recipes for cheesecake, Swedish Meatballs and this lovely appetizer, Bacon Stuffed Cherry Tomatoes. I tried them once and loved them immediately!
In spite of containing only five ingredients, however, this recipe is labor intensive. It takes quite a while to make. First the bacon has to be cooked and crumbled. Even though I microwave it, it usually can’t be done in under 30-45 minutes.
Of course, I like the bacon pieces crumbled extra small for this recipe. Then removing the pulp from all the tomatoes is a delicate operation. You have to be gentle enough with the tomatoes that you don’t tear them all up while coring and removing the guts. Finally, stuffing the tomatoes is no small task and it’s certainly difficult to do it without making a mess!
Even still, when all is said and done this is a fabulous appetizer! I polished off more than a handful of these jewels myself when we had a houseful of company over for lunch a couple of weeks ago. Everyone loved them. I don’t make them too often because they do take so long to prepare. But every now and then, they’re a spectacular treat for you family. If you have cherry tomatoes growing in your garden, this is an excellent way to prepare them.
Bacon Stuffed Cherry Tomatoes are the real deal. If you have a couple of kitchen helpers to lighten the load that would be ideal. Bacon Stuffed Cherry Tomatoes are wonderful fare for backyard barbecues, grilling out, or any tailgating party. If you have plenty of time on your hands (or plenty of help in the kitchen), I highly recommend these tasty appetizers. You won’t be disappointed, nor will your guests.

It’s easy to keep popping Bacon Stuffed Cherry Tomatoes in your mouth. Before you realize it, you will have downed a dozen! They’re that good.
Everyone loves these delicious appetizers.
Here’s what I did.
I used these ingredients.
Fry or microwave bacon. It needs to be cooked enough that there’s no fat, but not tough! Break the bacon up into tiny pieces. Add to a mixing bowl with diced green onions, sour cream and Miracle Whip.
Stir ingredients to combine.
With a vegetable peeler or corer, slice into the bottom side of the tomato (NOT the stem side). Gently remove the pulp, being careful not to tear the tomato in the process.
Here you can see the tomato is cored and pulp removed.
Stuff tomato with filling and heap filling on top.
Place Bacon Stuffed Cherry Tomatoes on a serving platter to serve. Refrigerate until ready to serve.
The bacon makes these tomatoes taste spectacular!

BACON STUFFED CHERRY TOMATOES
(Recipe adapted from Grace Manning, when we attended First Baptist Church of Indian Rocks, Largo, FL)
Bacon Stuffed Cherry Tomatoes
Equipment
- 1 small mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 vegetable peeler to remove pulp from tomatoes
- 1 sharp knife to cut tomatoes
Ingredients
- 2 lbs. bacon cooked and crumbled
- 1/2 cup green onion chopped
- 1/2 cup miracle whip
- 1/2 cup sour cream
- 50 cherry tomatoes washed
Instructions
- Fry bacon in skillet until done; drain on paper towel-lined plate.
- Once bacon is cool, break it up into very tiny pieces; set aside.
- Combine first four ingredients in a small mixing bowl.
- Cut off small portion of tomato bottom (not stem top.)
- Scoop out insides with a vegetable peeler.
- Heap stuffing into and up over top of the tomato.

Thanks, Shari. You are such an encouragement to me. These little jewels are delicious, they just take a lot of time to prepare unless you have helpers in your kitchen! I actually used some of the leftover stuffing in a wrap for my husband. He loved it! 🙂
