Chocolate and Vanilla Blondies are something special. A delicious shortbread base is filled with both chocolate and vanilla chips for a double whammy you’re sure to love. These delectable cookies are also fairly easy to make, too.

While I made them for our Christmas Cookie Extravaganza this year, you can make these for any tailgating party, baby shower or potluck all throughout the year. Chocolate chips and vanilla chips are easy to find. So there’s no reason not to make up a batch of these jewels frequently!

I baked several goodies for Christmas baskets this year using a delicious shortbread dough with different add-ins. Peppermint, Heath Toffee, White Chocolate Cranberry, and quite a few others. Every one turned out delightfully. I got a lot of comments on how much people enjoyed the varied flavors of the different blondies I made.

Place softened butter in a mixing bowl. Add oil, eggs, sugar, powdered sugar, baking soda, cream of tartar, sea salt and vanilla.

Cream the ingredients with an electric mixer until smooth.

Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add half of the chocolate chips and half of the vanilla chips.

Stir with a wooden spoon to combine.

Grease a large cookie sheet. Press dough mixture into baking sheet. Sprinkle remaining chocolate chips and vanilla chips over top.

Bake at 350 about 30-35 minutes or until a toothpick inserted in center comes out clean. Cool completely before cutting into bars.

  • 1 large mixing bowl
  • 1 electric mixer

Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 3/4 cup canola oil or use coconut oil or avocado oil
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 1/2 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 1 tsp. sea salt
  • 1 tsp. vanilla extract
  • 5 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
  • 12 oz. bag semi-sweet chocolate chips divided use
  • 12 oz. bag vanilla chips divided use

Instructions
 

  • Cream together butter, canola oil, sugars, eggs, vanilla, baking soda, cream of tartar and salt in a large mixing bowl with an electric mixer.
  • Add flour and one cup each of chocolate and vanilla baking chips and stir with a wooden spoon until very thoroughly mixed.
  • Press dough into an 11x17” jelly-roll style cookie sheet.
  • Sprinkle with remaining chocolate and vanilla chips.
  • Bake at 350° for 30-35 minutes or until lightly golden brown on top.
  • Cool completely.
