Back in early January, my husband and I traveled up to Spokane, Washington, for a wedding. The groom grew up in our church and was a semester away from graduating from the Moody Bible Institute campus there. He met a beautiful Idaho girl and fell in love. I spoke to the bride’s mother after the wedding and complimented her on the gluten free cupcakes she had made. Apparently, there are several in their family with gluten intolerance. Anyway, Celeste’s mom told me about her easy Peanut Butter Cookies with only three ingredients.
Donald and Celeste moved back to Texas after graduation and I asked Celeste about her mom’s recipe. I thought it would be perfect to make for our Kid’s Fest in July. Our church hosts a large festival in a park in DeSoto, Texas, each year. I ended up making about six or eight batches of this recipe. Along with my Chocolate Chip Cookies and Peachy Vanilla Chip Cookies, these cookies were snatched up immediately. I had several families come back for seconds and thirds because they enjoyed the cookies so much.
If you want the easiest recipe in the world for Peanut Butter Cookies, you’ve got to try out these amazing Three-Ingredient Peanut Butter Cookies. They’re terrific for snacks, tailgating parties, potlucks and for kid’s parties. If you’re short on time, it doesn’t get any easier than this. These cookies are so scrumptious, but because they have no flour they are a little on the fragile side. You’ll need to handle them with care. Even so, I think they’re some of the best Peanut Butter Cookies I’ve ever eaten. I think you will too.

These cookies are so easy to make since they have only three ingredients!
Every bite of these cookies is melt-in-your-mouth good.
I ate so many of these Three-Ingredient Peanut Butter Cookies. They were sooooo good. 🙂
Here’s what I did.
I used these ingredients.
Place creamy peanut butter, sugar and an egg in a mixing bowl.
Stir with a wooden spoon to combine.
Place extra sugar in a small bowl. Roll cookie dough into balls. Then roll each ball into the sugar in the bowl. Be sure to coat cookie dough well.
Spray large cookie sheets with cooking spray. Place cookie dough balls onto prepared cookie sheets.
Press each ball of dough gently in criss-cross fashion with a fork. Don’t be heavy-handed in this step.
Bake at 350 for 12-16 minutes. Rotate pans half way during cooking time. (My pans took about 15-16 minutes to bake).
Serve Three-Ingredient Peanut Butter Cookies at your favorite party or potluck.

THREE-INGREDIENT PEANUT BUTTER COOKIES

Three-Ingredient Peanut Butter Cookies
Equipment
- 1 18x26" cookie sheet pan
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
- 1 fork
Ingredients
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1/4 cup granulated sugar for rolling the cookie dough balls in
Instructions
- Preheat oven to 350.
- Spray cookie sheets with cooking spray.
- Set aside.
- Combine peanut butter, sugar and egg in a mixing bowl with a wooden spoon.
- Pinch off a couple of tablespoons of dough and roll into balls.
- Roll balls in granulated sugar and coat well.
- Place sugar-coated balls on prepared cookie sheets.
- Press down lightly in criss-cross fashion with a fork.
- Bake for 12-16 minutes until lightly browned and cookies have set up.
- Rotate cookie sheets on oven racks every six minutes of baking time.
- Cool completely.

Can you use Splenda in your peanut butter cookie

Hi Renee. I’m not sure this particular cookie would work with splenda because it gets a lot of it’s texture from the sugar. Sorry.

After being diagnosed with Celiac disease 2 years ago, this is the recipe I’ve been using for about a year and a half. They are outstanding and 4 batches are gone with in 2 days. I also have added chocolate chips to them and other gf candy or drizzle melted chocolate over then and of course the Kiss in the middle at Christmas time
