Rainbow Chip White Chocolate Cookies
Rainbow Chip White Chocolate Cookies are so fun! These delightful cookies start with a Rainbow Chip Cake Mix. Then added to the mix is a bag of white chocolate chips. Yum. (Not vanilla chips). On top of that, there are only 4 ingredients. This is my kind of cookie. But I’m a “sprinkles” kind of gal.

I love funfetti in anything and I have a ton of funfetti recipes on my blog including one for pancakes, donuts, cake and so many for cookies and blondies you wouldn’t believe it. 🙂 Yes, you can say I love rainbow sprinkles, funfetti sprinkles, confetti sprinkles, whatever you want to call them.
I made these lovely cookies a couple of months ago when I was making a lot of cake mix cookies. It didn’t hurt that these cookies only used 4 ingredients and could be done in 30 minutes! When you’re in the kitchen all day baking, sometimes it’s really preferable to do EASY!
Even though Rainbow Chip White Chocolate Cookies are easy, they’re still really delicious to the taste buds. I recommend them any time you have birthdays or special occasion parties for your kids. They will absolutely drool over them. (So will the adults for that matter). Eat and enjoy.

Rainbow Chip White Chocolate Cookies are terrific for birthday parties and kid-friendly activities.

If you take a stack of these cookies out to your office, watch them disappear. 🙂

These cookies will have you drooling from the first bite!
Here’s what I did.

I used these ingredients.

Pour Rainbow Chip Cake Mix into a mixing bowl. Add eggs and oil.

Stir ingredients to combine.

Add white chocolate chips. NOT vanilla chips.

Stir ingredients again to combine.

Roll cookie dough into balls and place on greased cookie sheets.

Bake at 350 for 13-15 minutes or until done.

Do you have a sweet tooth craving? Give Rainbow Chip White Chocolate Cookies a try.

These cookies are also terrific for potlucks, backyard barbecues, or grilling out with friends.

I love the ease of a recipe with only 4 ingredients!
Here’s the recipe.
RAINBOW CHIP WHITE CHOCOLATE COOKIES
(My own concoction)

Prep Time | 10 minutes |
Cook Time | 15 minutes |
Servings |
|
- 15.25 oz. box Betty Crocker Rainbow Chip Cake Mix
- 1/3 cup canola oil
- 2 large eggs
- 11.25 oz. bag white chocolate chips NOT vanilla chips or premiere white baking chips

- Preheat oven to 350°.
- Combine cake mix, oil and eggs.
- Stir in white chocolate chips.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets on racks every six to seven minutes while baking.
NOTE: Because I was baking three racks of cookies at once, my cookies took 18 minutes to make. I also rotated the trays every six to seven minutes.
NOTE: These cookies must be rotated during baking or the white chocolate chips will brown on the top rack.
NOTE: I found it easier to keep my hands moist while rolling cookie dough into balls.
NOTE: Be sure to use true white chocolate chips. Most stores only carry white or vanilla chips. They are not the same. In the Dallas area the only two stores that carry white chocolate chips are Kroger and Trader Joe’s.
