White Chocolate Spice Cookies
White Chocolate Spice Cookies are something special. These easy 4-ingredient cookies start with a Spice Cake Mix. Add eggs, oil and white chocolate chips (NOT vanilla chips), and you’re done! So simple, so easy, so delicious.
I usually keep my freezer stocked with 20 to 30 containers of cookies or brownies at any given time. John noticed I was getting low on cookies so I decided to do a bunch of easy cake mix cookies. Most of the recipes had only 4 ingredients, although a few had 5 or 6. Regardless, all the cookies were so easy to make up. I made a Pina Colada version, Lemon, Almond Joy, Strawberry, Funfetti, Carrot Cake and Red Velvet.
After that, I started making a new round of cookies with different cake mixes. Truthfully, I wondered how this cake mix would fare with white chocolate. But I shouldn’t have worried. It was fantastic! The folks John ended up giving the cookies to wrote back about how much they enjoyed these jewels. Yes, they were terrific.
If you need a quick 4-ingredient recipe, I can’t recommend White Chocolate Spice Cookies enough. Be sure to get REAL white chocolate chips. NOT vanilla chips or premiere white baking chips. Those chips have no cocoa in them. They are not the same. Here in the Dallas metroplex the only two stores you can find white chocolate chips are Kroger and Trader Joe’s.

Here’s what I did.
I used these ingredients.
Pour Spice Cake Mix into a mixing bowl. Add eggs and canola oil.
Stir ingredients to combine.
Add white chocolate chips. NOT vanilla chips.
Stir ingredients again to combine.
Roll dough into balls and place on greased cookie sheets. (I had to keep my hands slightly moist while rolling).
Bake at 350 about 13-15 minutes or until done. Rotate racks during baking time.
White Chocolate Spice Cookies are wonderful for holiday baking too. Try them at your next Christmas Cookie Exchange.
These easy cookies are wonderful for backyard barbecues and Family Reunions, too.
