During the corona virus shut down I tried lots of new recipes. Mostly main dishes and side dishes. This one was served along with Italian Pot Roast and Garlic Green Beans. It was fantastic as far as I was concerned. It’s great with or without the gravy from the pot roast. This drool worthy recipe won’t last long because it’s so good your family will want seconds. 🙂
Our neighbor’s wife had to travel with her job for several weeks during the crisis. So I sent her husband some of the roast, potatoes and green beans for dinner one night. He loved everything too. Both recipes were pretty easy. The nice thing about this side dish, is you can make it for any kind of entree, chicken, fish, pork or beef.
Alfredo Potatoes is just what you’re looking for, for dinner. Seriously. Those of you who enjoy Garlic Mashed Potatoes will enjoy this side dish just as well. We sure did. Go ahead and have a serving of gravy with it while your at it. 🙂

This easy recipe has only 6 ingredients.
It’s wonderful with Italian Pot Roast and Garlic Green Beans. You can serve it with or without the gravy.
Alfredo Potatoes are especially good for holiday or company dinners. We loved them with Italian Pot Roast and Garlic Green Beans.
Here’s what I did.
I used these ingredients. I did not use the cornstarch in the potatoes. I actually used it when making the gravy for the Italian Pot Roast. I also used diced onion.
Cut large red potatoes in quarters. Boil until soft; then drain.
Add butter, Alfredo sauce, diced onion, half of the chives and pepper.
Mash potatoes with a potato masher.
Transfer potatoes to a serving bowl to serve. Sprinkle with remaining fresh, snipped chives.
I served Alfredo Potatoes with Italian Pot Roast and Garlic Green Beans. It was a wonderful comfort food meal.

ALFREDO POTATOES
(Recipe adapted from Taste of Home, Quick Cooking, 2008)
Alfredo Potatoes
Equipment
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
- 1 large sauce pan with lid
- 1 colander
- 1 potato masher
- 1 serving dish as desired
Ingredients
- 2/3 cup onion chopped
- 8 large red potatoes quartered
- 11 oz. container refrigerated Alfredo sauce
- 2 tbsp. unsalted butter
- 1/4 tsp. ground black pepper
- 1 tbsp. fresh chives minced
Instructions
- Place potatoes in a large sauce pan.
- Cover with water; bring potatoes to a boil.
- Reduce heat; cover with lid and simmer potatoes for 15-20 minutes or until potatoes are fork tender.
- Drain potatoes in colander.
- Return potatoes to large sauce pan.
- Mash potatoes with Alfredo sauce, onions, butter, pepper and half the chives.
- Transfer mixture to serving dish.
- Sprinkle with remaining chives.
- Serve with sliced Italian Pot Roast and gravy.
- If desired, drizzle gravy over top of potatoes before serving.

These potatoes really hit the spot when served with roast beef.
I enjoyed eating them with the gravy from the roast.
The Alfredo Sauce adds such delightful flavor to ordinary Mashed Potatoes.
