Hearty Beef Stew with Dumplings
I love adding dumplings to stew and chili recipes and it sure works exceptionally well in this Hearty Beef Stew with Dumplings recipe. I started off with one of my favorite homemade beef stew recipes. Then I took my favorite dumpling recipe and combined them. I also made it in the crockpot so everything was incredibly easy. Yessiree! This entree is a keeper.

We had some old friends over for dinner in March along with our son and his wife. I decided to make this hearty meal for the main course. I added a wonderful Bacon Tomato Avocado Salad and one of my favorite pies: Strawberry Cream Pie. An old vintage recipe my mom used to make for us. My daughter-in-law loves my pies so I usually throw something gooey together for her. It was one fantastic meal.
This Hearty Beef Stew with Dumplings includes lots of veggies. Besides the usual potatoes, carrots and celery, I added green beans, peas, corn, mushrooms and stewed tomatoes. I seasoned the stew with Worcestershire sauce, and some of my favorite herbs. The dumplings are also well seasoned–not bland.
This is one of those filling and satisfying entrees that makes a perfect one dish meal. The fact that you can toss it together in the slow cooker and not have to watch it on top of the stove makes it even easier. I know a lot of people enjoy this kind of meal particularly in cooler climates, but we enjoy stew just about any time of the year. (Although I served this back when it was still cool outside).

Hearty Beef Stew with Dumplings is a wonderful comfort food recipe.
The stew is so savory and delicious and the dumplings are mouthwatering.
Every biteful will warm your insides.
Here’s what I did.
I used these ingredients for the stew.
Dredge stew beef in flour.
Place in crock pot.
Add beef broth.
Cover with lid.
Cook about 2 hours until beef is almost done. Stir ingredients.
Add potatoes, carrots, onion and celery. Notice I cut the veggies in large chunks. You don’t want them turning to mush while the recipe cooks!
Add seasonings, bay leaves and Worcestershire sauce.
Stir ingredients to combine. Cover with lid.
Cook again approximately 2 hours until veggies are about fork tender.
Add frozen corn, peas and green beans.
Stir to combine. Cover with lid. Cook about 30 minutes. Remove bay leaves.
I used these ingredients for the dumplings.
While frozen veggies are cooking, prepare dumplings: Place flour in a mixing bowl. Add salt, pepper, parsley, marjoram, chives and thyme.
Stir dry ingredients to combine.
In a separate mixing bowl, add egg, melted butter and half-and-half.
Whisk to combine.
Add wet ingredients to dry ingredients.
Stir to combine. Measure dumpling dough with large cookie scoop.
Drop dumpling scoops on top of hot stew. Cover with lid.
Cook about 30-45 minutes, or until a toothpick inserted into the dumplings is no longer gooey in the centers.
Here the stew is accompanied by Chopped Cucumber Caprese Salad.
Because I had company, I served this meal with salad and dessert. But it’s a complete meal-in-one dish by itself.

HEARTY BEEF STEW WITH DUMPLINGS

Hearty Beef Stew with Dumplings
Equipment
- 1 large crock pot
- 1 sharp knife to cut vegetables
- 1 vegetable peeler
- 2 small mixing bowl
- 1 wooden spoon
- 1 soup ladle
- 1 whisk
Ingredients
BEEF STEW:
- 2 1/2 to 3 lbs. stew beef (I used 2 3/4 lbs.)
- 1/2 cup flour as needed
- 2 cups beef broth
- 1 1/4 lbs. red potatoes washed and chunked (or 2 large potatoes peeled and cut into chunks)
- 3 large carrots peeled and sliced
- 2 ribs celery cut in one-inch chunks
- 1 large onion chopped
- 31 oz. can stewed tomatoes undrained (I used Italian style)(two 15.5-ounce cans)
- 4 oz. can sliced mushrooms drained
- 1 tbsp. Worcestershire sauce
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 1 tsp. dried thyme
- 1 tsp. dried chives
- 1 tbsp. dried parsley
- 3 bay leaves
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 3/4 to 1 cup frozen green beans
DUMPLINGS:
- 1 1/2 cups all-purpose flour
- 3 tsp. baking powder
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 1 tsp. dried thyme
- 1 tsp. dried chives
- 1 tsp. dried marjoram
- 1 tbsp. dried parsley
- 1 large egg beaten
- 3/4 cup half-and-half
- 1 tbsp. salted butter melted
Instructions
BEEF STEW:
- Dredge stew beef in flour until well-covered.
- Spray crockpot with cooking spray.
- Add dredged beef and beef broth and cook on high heat about 2 hours until meat is almost done.
- Stir beef.
- Add potatoes, carrots, celery, onion, tomatoes, mushrooms and seasonings.
- Continue cooking in slow cooker on high for about 2 hours until veggies are almost fork tender.
- Remove bay leaves.
- Add corn, peas and beans and cook about 30 minutes.
- Add dumplings and cook about 45 minutes to an hour or until dumplings are cooked through when checked with a tooth pick.
DUMPLINGS:
- In a small mixing bowl, combine flour, baking powder, salt, pepper, parsley, chives, thyme and marjoram.
- In a separate bowl whisk egg, half-and-half and melted butter.
- Add liquid mixture to dry mixture.
- Stir well to combine.
- Drop by large tablespoonfuls (or cookie scoops) onto hot stew.
- Cover slow cooker with lid and continue cooking in crockpot 45-60 minutes, or until a toothpick inserted in the center of the dumplings comes out clean.
