Mint Chocolate Fudge Cookies
Oh, my GOODNESS! Mint Chocolate Fudge Cookies are sensational. I’ve made these cookies about 10 times since late spring. I’ve given them out to approximately 50-75 people. Everyone wants more and everyone raves over them. No kidding.

These delectable cookies include the Walmart knock-off brand of mint chocolate fudge pieces (Andes) and finely chopped almonds in one of my favorite Chocolate Chip Cookie recipes. The mint is just enough to get the essence without overpowering the cookie. Everyone enjoys the almonds but usually can’t figure out what kind of nut is in the cookie! And, of course, everyone always loves the chocolate. In this case, chocolate fudge!
These cookies have gone out to so many neighbors, friends and folks at our church. The first time I made them I gave them to one of the staff members at our church when we were there for a meeting. We were in a public meeting room and everyone that swung by that day wanted a sample. Our pastor came by and snagged some additional cookies for his kids who were there at the time. As I said, everyone who’s tried these cookies have loved them. They’re just the perfect blend of everything!
While these cookies are terrific for tailgating parties and potlucks, I highly recommend you make them for your Christmas and holiday baking this year. They’re just the perfect cookie! Everyone’s gonna want seconds, thirds or fourths! 🙂
My only recommendation is that you stir the batter about 5 minutes when mixing by hand (after adding the last ingredients). The dough must be THOROUGHLY mixed and solidly packed into the cookie scoop in order for this recipe to work correctly. When I say thoroughly, that means you stir beyond just mixing and stir until big clumps start forming with the dough. Seriously, this takes 4-5 minutes and can’t be done a minute sooner.
Mint Chocolate Fudge Cookies are the best. Pick up several packages of the baking chips at Walmart the next time you’re there and enjoy a cookie that’s so swoon-worthy you’ll be drooling from the first bite.

Even a stack of cookies is not enough. You’re gonna want more, more, more!!!
Here’s what I did.
I used these ingredients. Walmart carries these Mint Fudge Flavored Baking Chunks regularly in Texas. I use two full bags for this recipe!
Soften butter. Add granulated sugar, brown sugar, real vanilla extract (yes, that’s a tablespoon!), baking soda and salt.
Mix ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods.) Add 2 bags of Mint Fudge Flavored Baking Chunks and finely chopped almonds.
Stir, stir, stir with a heavy metal spoon for about 5 minutes until the dough is stirred so thoroughly that large clumps begin to form.
Scoop and pack dough into a large cookie scoop, before leveling off.
Place cookie dough on UNGREASED baking sheets about 3 inches apart.
Bake at 350 degrees about 16 minutes. Rotate cookie sheets on racks about every 8 minutes during baking time. My cookies took 18 minutes to bake completely because they’re whoppers!
Seriously, Mint Chocolate Fudge Cookies will be gobbled up immediately at any party.
You’ll be drooling from the first bite.

MINT CHOCOLATE FUDGE COOKIES
(My own concoction)
Mint Chocolate Fudge Cookies
Equipment
- 3 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 1/4 cup cookie scoop
- 1 spatula
- 1 nut chopper to finely dice whole almonds
- measuring cups
- measuring spoons
- 3 wire cooling racks
Ingredients
- 1 1/2 cups butter softened (3 sticks)
- 1 1/4 cups granulated sugar
- 1 1/4 cups light brown sugar packed
- 2 large eggs
- 1 tbsp. pure vanilla extract (tablespoon NOT teaspoon)
- 2 tsp. baking soda
- 1 tsp. sea salt
- 4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 20 oz. pkg. mint chocolate fudge baking chips (two 10-ounce packages)
- 2 cups almonds finely chopped (measure after chopping)
Instructions
- Preheat oven to 350°.
- Mix butter, sugars, eggs, vanilla, baking soda and salt in a large mixing bowl with electric beaters until smooth.
- Stir in flour, mint fudge baking chips and almonds.
- Stir thoroughly; this may take 4-5 minutes.
- With a large cookie scoop, scoop cookie dough and pack it into the cookie scoop before leveling it off.
- Place onto ungreased cookie sheets approximately3-inches apart.
- Bake 12-15 minutes or until lightly browned.
- Rotate cookies on racks every seven to eight minutes while baking.
- Cool cookies about 5 minutes on cookie sheets before removing to wire racks to cool completely.

Wonderful recipe! I halved the recipe to try it out. I used pecans instead of almonds. The cookies are nice and chewy. Don’t over brown or they get dry.

Hi Diane. So glad you enjoyed these goodies. Yes, these have been some of our favorite cookies! Remember that I use a really large cookie scoop so they are pretty large and take longer to bake than if I used a smaller scoop.

Can you make these cookies smaller. I like to bake cookies for first responders – fire & rescue, and sheriff’s office. I know they’d love these, and they’d be gone in a nanosecond, so would like them smaller. Possible?

Hi Christine, yes, you can make them smaller, but you will need to adjust the baking time. They won’t take as long. Every time I bake these cookies they are a hit! Hope they enjoy them.
