Chopped Asian Salad

Chopped Asian Salad is utterly delightful. This delicious salad uses several ingredients you’re probably not used to eating. But no worries. They taste marvelous together. This one uses Chinese cabbage, red cabbage, carrots, cilantro, radishes, green onions, almonds and sunflower seeds. The homemade dressing is also fantastic. This lovely recipe is healthy, low calorie, clean eating, gluten free and vegan.

The first time I ate this salad was in 2013. Some church friends of ours would get together with us occasionally on Friday nights. We would have dinner together and then go out to the movies. On one of those occasions, Linda brought this recipe. I had forgotten about it for years. But when I was going through my phone emails I discovered it again a couple of years ago. I made sure to input it into my computer so it would no longer be forgotten.
Linda Baker was a very health conscious friend. She had her own garden and fed her family a vegan diet for years. She modified her diet after reading a book called Nourishing Traditions. But she always had lots of healthy dishes on the menu. She had some of the best concoctions for foods I’ve ever enjoyed. I think about Linda when I make this recipe, because she is no longer with us. She contracted ALS (Lou Gehrig’s Disease) and died about 2 1/2 years ago now. So many in our church family miss her.
I served Chopped Asian Salad to our college group on a Sunday night in January. The host made Grilled Lemon Pepper Chicken. I brought this salad, a fruit tray, Garlic Mashed Potatoes and Texas Sheet Cake. That was one mouthwatering meal. Our college group really enjoy eating healthy. I was amazed at how many dug into this salad and came back for seconds! I ended up eating it for leftovers with Grilled Swiss Cheese and Tomato Sandwiches. Yes, this is one terrific salad. It’s elegant enough to serve for holidays or company.
Don’t think for a minute that this is a bitter or awful tasting salad, because it’s not. You may not frequently use Chinese cabbage or radishes in your salads, but the combination is wonderful. The dressing is heavenly. My only recommendation is to make it only a couple of hours before you’re ready to serve it. Or pour the dressing ingredients on the salad right before serving. The salad stays fresher a little longer that way. But whatever you do, make up a batch of Chopped Asian Salad soon. It’s too good to miss out on. 🙂

I served the leftovers of this salad with Grilled Swiss Cheese and Tomato Sandwiches. Yum.
Asian Chopped Salad is elegant enough to serve for company and holidays.
Here’s what I did.
I used these ingredients for the salad.
Pull off the leaves from the Chinese cabbage and wash each separately. Pat each leaf dry with towels. Chop up cabbage into small dice. Place in a very large salad bowl.
Add chopped red cabbage.
Add matchsticks carrots or grated carrot.
Add finely diced radishes, green onions and fresh cilantro.
Stir to combine. I had to transfer the mixture to a larger salad bowl at this point.
Add sunflower seed kernels and slivered almonds. Stir to combine.
I used these ingredients for the salad dressing.
Drizzle olive oil over top of the salad.
Drizzle apple cider vinegar over top of the salad.
Drizzle sesame oil over top of the salad.
Drizzle honey over top of the salad. Sprinkle with salt and pepper.
Stir very well, until all the ingredients are thoroughly combined. Refrigerate up to two hours before serving.
Chopped Asian Salad is a good side dish for any meal. It’s also great with Grilled Swiss Cheese and Tomato Sandwiches.

ASIAN CHOPPED SALAD
(Recipe adapted from Linda Baker, Ovilla Road Baptist Church, Ovilla, TX)
Chopped Asian Salad
Equipment
- 1 large salad or serving bowl
- 1 vegetable peeler
- 1 sharp knife to cut vegetables
- 1 food processor to shred cabbages, if desired
- measuring cups
- measuring spoons
- 1 large serving spoon to toss salad
Ingredients
CHOPPED SALAD:
- 1 head Chinese cabbage shredded or chopped finely
- 1/2 head red cabbage shredded or chopped finely
- 2 large carrots peeled and shredded
- 3 radishes grated
- 2 green onions diced
- 1/2 cup fresh cilantro chopped
- 1/2 cup almonds toasted, or more, as desired (I did not toast the almonds)
- 1/4 cup sunflower seed kernels lightly roasted and salted
SALAD DRESSING:
- 1/2 cup extra-virgin olive oil
- 1/4 cup sesame oil
- 1/3 cup apple cider vinegar
- 1/3 cup honey or a few drops of Pure Stevia extract
- 1/4 tsp. sea salt
- 1/8 tsp. ground black pepper or more to taste
Instructions
CHOPPED SALAD:
- Combine cabbages, carrots, radishes, green onions, cilantro, almonds and sunflower seeds in a very large serving bowl.
SALAD DRESSING:
- Drizzle olive oil over top of salad ingredients and stir completely.
- Add sesame oil and then apple cider vinegar and stir into salad.
- Sprinkle salt and pepper over top and drizzle with honey and mix once again.
- Refrigerate up to two hours until ready to serve.

Nutrition
Salad and sandwiches work so well together for a light lunch or dinner menu. Of course, who doesn’t love a Grilled Cheese Sandwich?
Asian Chopped Salad is a great salad to put on holiday menus like Memorial Day or Fourth of July. It’s also great for potlucks or whenever you’re grilling out with friends.
