Cherry Pecan Bars
I love anything with cherries and Cherry Pecan Bars are outrageously delicious! These lovely bar-type cookies include dried cherries, finely diced pecans and coconut. They have spectacular flavor and a dynamic crunchy-chewy taste that can’t be beat. If you enjoy cherry desserts, this dessert is one you should try.

Back in the early days of the Corona Virus scare, I made up a ton of these cookies in various renditions. I made 5 different kinds in all and each one was superb. I was locked in at home and decided to go on a baking binge. I made Blueberry, Coconut, Cranberry, Heath Toffee and this luscious cherry version.
I stored them in my freezer knowing that my husband would not be able to give them away to people (except in our neighborhood) until July or August. Thankfully, these bars freeze well and can be enjoyed months after baking.
If you enjoy cherries, Cherry Pecan Bars is the dessert for you. The recipe makes 48 servings, so it’s great for tailgating and office parties, potlucks or summer holiday fun (like Fourth of July!) For that matter, any time you need to feed a crowd these terrific cookies should be on the menu. Every crunchy bite will have your jaws dropping!
Cherry Pecan Bars are sensational!
These delicious cookies have a crunchy texture that’s irresistible.
Cherries, pecans and coconut go so well together.
Cherry Pecan Bars will cure any sweet tooth craving.
Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, eggs, vanilla, salt and baking soda.
Mix with an electric mixer until creamy.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add finely diced pecans, coconut and dried cherries.
Stir ingredients well to combine.
Spray an 15-1/2×20″ cookie sheet with cooking spray. Press cookie dough into prepared cookie sheet.
Bake at 350 degrees for about 30 minutes, or until a toothpick inserted in center comes out clean. (I was baking multiple pans at a time so my cookies took about 45 minutes).

CHERRY PECAN BARS
(My own concoction)
Cherry Pecan Bars
Equipment
- 1 15x20" cookie sheet pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- 1 nut chopper if nuts are not previously chopped
- 1 spatula
- measuring cups
- measuring spoons
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/2 cups light brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 2 cups sweetened coconut
- 10 oz. pkg. dried cherries
- 3 cups pecans coarsely chopped (measure after chopping)
Instructions
- Preheat oven to 350°.
- Grease or spray a large 15-1/2"x20” cookie sheet with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour, dried cherries, coconut and pecans with wooden spoon until combined.
- Stir thoroughly; this may take 4-5 minutes.
- Spread mixture into cookie sheet and pat down firmly.
- Bake at 350 degrees for about 25-30 minutes, or until lightly browned and a toothpick inserted in center comes out clean.
- Cool completely before cutting into bars.

This recipe makes a lot. I cut the bars rather large and had 48 servings. But you can cut these smaller and get 64 to 80 servings out of each pan.
