Have I got a super, duper easy recipe for you today. Italian Chicken. Yes, it’s one of the easiest yet tastiest chicken entrees ever! I used a Zesty Italian salad dressing along with Parmesan cheese to make this delicious chicken dish. The chicken is marinated earlier in the day and then baked for dinner.

We had our son and his wife over for lunch back in August. I decided to serve this easy chicken recipe along with a Spicy Creamed Corn dish and fresh fruit. Everything was really delicious, yet so quick and easy for me to toss together. At the time, my husband was recovering from a stroke and I had to keep an eye on him constantly because he was a fall risk. I didn’t have time for lavish meals or anything that took very long to prepare. These two dishes fit the bill perfectly.
Italian Chicken is also gluten free if you make sure your salad dressing is gluten free. If you need a quick entree for a busy weeknight supper, this is a great option. Toss the chicken in the salad dressing marinade before going to work. Then add the parmesan cheese on top and bake as soon as you get home. You have time to help your kids with homework while the chicken is cooking. The corn recipe takes about 10 minutes and you can pull out fresh fruit and have a really simple meal ready to go in as long as it takes the chicken to cook.
Yes, Italian Chicken is a win-win no matter how you slice it. 🙂
Italian Chicken is so easy to prepare for weeknight dinners.
This tasty entree uses only 4 ingredients!
Italian Chicken is perfect for a company dinner because it’s so easy to prepare.
Here’s what I did.
I used these ingredients, plus fresh parsley.
Place chicken in a baking dish. Pour salad dressing over top of chicken and cover with plastic wrap. Marinate chicken for several hours if possible.
When ready to bake, remove from refrigerator and sprinkle with parmesan cheese.
Bake at 375 degrees for about 50-55 minutes or until meat is cooked and juices run clear when pierced with a knife.
Transfer chicken to a serving plate, if desired. Sprinkle with fresh, minced parsley.
I served Italian Chicken with Spicy Creamed Corn and fresh fruit.
We loved the way this chicken recipe turned out.

Italian Chicken
Equipment
- 1 9x13" glass baking dish
- measuring cups
- measuring spoons
- 1 sharp knife to mince parsley
Ingredients
- 4 chicken breasts boneless, skinless
- 1 cup Zesty Italian salad dressing
- 1/2 cup Parmesan cheese grated
- 1 tsp. fresh parsley minced, for garnish
Instructions
- Place chicken in a 9x13” glass baking dish.
- Cover with Italian dressing.
- Cover with plastic wrap.
- Refrigerate a few hours or up to eight hours.
- Sprinkle chicken breasts evenly with parmesan cheese.
- Bake, uncovered at 375° for about 55-60 minutes or until chicken is cooked through and juices run clear.
- Sprinkle with parsley.

This Italian Chicken recipe looks delicious! I can’t wait to try it. I noticed that it calls for both bone-in and boneless chicken breasts. Do you think it would work well to use only boneless chicken, or do you recommend using both for a better flavor? Also, I’m not a big fan of capers – do you think I could omit them, or is there a good substitute? Thank you for sharing this recipe!

You must be looking at the WRONG recipe. This recipe calls for boneless chicken breasts and NO capers.

Thanks Teresa, since I wanted to make sure about the liquid, so that my chicken wouldn’t come out dry. I’m making this chicken tonight, & will serve it with a huge Broccoli Salad (we LOVE veggies). Also, I want to say that (IMO), you’re one of the TOP recipe bloggers out there, inasmuch as you post incredibly delicious recipes, your photos are beautiful, & most important to your followers is the fact that you ALWAYS follow up to answer whatever questions anyone asked regarding a recipe (not all bloggers are THAT vigilant). Sounds super easy, & OH SO tasty! I’m assuming that you don’t drain the dressing/
marinade from the baking dish before baking the chicken, right? We’ll love this, since Zesty Italian is one of our favorite Salad dressings. Thanks, Teresa! 🍽

Hi, Angelina. I didn’t drain the dressing. I merely spread it over the top better (like basting). It is SOOOO easy. You and your family will probably love this easy recipe.
