Georgia Chili
Oh my goodness, I think Georgia Chili is going to go to the top of my favorite chili recipes! Seriously, I loved the texture of this chili more than any other chili recipe I make. It’s thick, enjoyable, and not overly spicy. While some may prefer to dilute their chili with broth or water, I loved the really thick texture. So marvelous.

We had this chili recipe one Thursday evening at our Bible study group. The hostess served it with flavored Fritos, sour cream and cheese. I loved it and asked for the recipe. Imagine my surprise when I looked at the ingredients and saw bacon fat listed! As it happened, I had cooked off a lot of bacon a couple of weeks before and saved the grease for recipes just like this! Instead of a pound of ground beef, I used 2 1/4 pounds. I also used one of those hamburger mashers that cut the ground beef into really small pieces while cooking.
Additionally, I couldn’t find the chili beans (using pinto beans) in a smaller container so I used a large container and threw it all into the mix. I could have added broth or water after everything was cooked, but I didn’t want to. As I stated above, I loved the thick texture. I served it with some homemade Easy No-Knead Dinner Rolls. I got that recipe from my daughter-in-law. She and her mom have worked for years perfecting the recipe, and it is indeed, perfect.
Georgia Chili and some hot, homemade rolls make the most wonderful comfort food meal ever. This chili is marvelous served reheated too. I had several bowlfuls for lunch afterwards. This is actually a very easy recipe to throw together. It’s done in a little over an hour. Whether you make it for weeknight dinners or company, Georgia Chili is one recipe you shouldn’t be without! I’m sure glad it’s on my regular menu rotation now. 🙂
Georgia Chili is wonderful with Easy No Knead Dinner Rolls.
Add Fritos, Tortilla strips, cheese and sour cream and you’re good to go!
A batch of my homemade Easy No Knead Dinner Rolls made this comfort food meal just about perfect.
Here’s what I did.
I used these ingredients. The container on the front left contains bacon grease.
Place bacon grease in the bottom of a Dutch oven or large stock pot. (You can also use olive oil or avocado oil).
Add onions and saute.
Add ground beef.
Use a hamburger masher to break the ground beef down into very small pieces.
Continue cooking over medium heat until meat is browned and no longer pink.
Add tomato paste and undrained diced tomatoes.
Stir to combine.
Combine chili powder with water and stir well.
Add chili powder mixture, bay leaves and remaining seasonings. Cover with lid and cook over low to medium heat for 60 minutes.
Add chili beans and heat through.
Serve with Fritos, tortilla strips, cheddar cheese and sour cream.
A good sprinkling of cheddar cheese and a little dab of sour cream made this chili even better. Serve them with Easy No-Knead Dinner Rolls and you have a match made in heaven!
The texture was wonderful. Every mouthful was irresistible.
We served Georgia Chili with some Easy No Knead Dinner Rolls slathered with Apple Butter. Yum!

GEORGIA CHILI

Georgia Chili
Equipment
- 1 Dutch oven with lid
- 1 hamburger chopper to break meat down in small pieces while frying
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
- 1 spatula
- 1 wooden spoon
- 1 soup ladle
Ingredients
- 2 tbsp. bacon drippings (or use olive oil or avocado oil)
- 1 large onion diced
- 2 1/4 lbs. lean ground beef (the original recipe called for 1 pound)
- 30 oz. can petite diced tomatoes undrained (two 15-ounce cans)
- 6 oz. can tomato paste
- 1 tsp. sea salt
- 1 tsp. granulated sugar
- 1/8 tsp. red pepper flakes
- 1/8 tsp. paprika
- 1/8 tsp. garlic salt
- 3/4 to 1 tbsp. chili powder (dissolved in a little water)
- 1 bay leaf
- 27 oz. can chili beans with mild sauce (or a 16-oz. can chili pinto beans)
Instructions
- Brown onion in bacon grease in large Dutch oven.
- Add ground beef and cook until no longer pink.
- Use a hamburger chopper and break meat down into small pieces while frying.
- Add remaining ingredients except the beans.
- Cover with lid and simmer for one hour, stirring occasionally.
- Add chili beans and heat through.
- If mixture seems too thick, dilute with a little water.
- Serve chili with Fritos or Tortilla Strips, sour cream and cheddar cheese, if desired.

Nutrition
Georgia Chili was not overly spicy. It’s tolerable for even kids and finicky eaters.
Georgia Chili is even great reheated for leftovers. Add some Easy No-Knead Dinner Rolls topped with Apple Butter and the combination can’t be beat!
