Gluten Free Peach Pancakes with Peach Topping are so mouthwatering you won’t be able to stop eating them! Okay, I admit I went over the top on the Peach Topping for these pancakes and ladled it on so thickly you can hardly see the pancakes for all the topping!

Peaches are my favorite fruit and when I saw peaches at the grocery store in March I succumbed and bought a bunch of them. They were actually quite tasty for this time of the year, too. They must have brought them in from South America or somewhere. Anyway, I love peaches and not just plain either. I’m always on the look out for ways to include peaches in recipes.
I had a hankering for pancakes a couple of weeks ago (and I don’t think there’s ever a time when I don’t crave pancakes!) but I have been trying to come up with healthier options, such as gluten free flour, honey and maple syrup as substitutes for sugar or corn syrup, and more fruit instead of my favorite, [ahem] chocolate chips! (Yes, I’ve made those recently and the recipe will get posted eventually).
So when I remembered the peaches in my refrigerator the other day I decided to give it a whirl and make up some peach pancakes and a peach topping. I am so glad I did. Even though I ladled too much topping on these pancakes they were fantastic! If you aren’t as addicted to peaches as I am just serve them with maple syrup instead–but you will be depriving yourself of a really delicious topping if you do!

When I initially posted this recipe in March 2013, it was before I began taking pictures with my new Canon camera. As a result, I’ve been going back through all my first year blog recipes and remaking them so I can get more eye-appealing pictures.
I recently remade Gluten Free Peach Pancakes with Peach Topping for breakfast (June 2015) and, again, I savored every bite. My recommendation? Just close your eyes and enjoy every mouthful. 🙂

If you’re looking for a gluten free pancake recipe this one allows you the enjoyment of pancakes without the side effects of gluten.
Lots of delicious peaches are incorporated into this fruity topping, plus there are peaches in the pancakes!
Here’s what I did.
I used these ingredients for the pancakes. I no longer recommend Pamela’s gluten free products as the flavor is off. Today (circa 2023 versus 2013) there are so many good gluten free flours on the market that I would recommend almost anything else.
Place gluten free flour in a mixing bowl. Add coconut oil, cinnamon, an egg and vanilla.
Add 2% milk and fresh, diced peaches.
Stir or whisk ingredients to combine.
Lightly oil skillet with coconut oil. Add pancake batter and cook over medium heat about 5 minutes, or until bubbles form on the surface and pancake is almost cooked through.
Turn pancake over and cook remaining side about 1-2 minutes. Stack pancakes on plates. Keep warm while making topping.
I used these ingredients to make the topping.
Peel and dice peaches. I used 3 of them for the topping and 1 for the pancake batter. To make the topping: place diced peaches in a saucepan. Add cinnamon, vanilla and honey. Stir to combine. Heat over medium heat about 10 minutes. Continue stirring while the sauce thickens slightly. As the sauce was simmering I mashed down the peaches with a potato masher.
Cook over medium heat until mixture thickens. Turn heat to low. Keep topping warm.
Just before you’re ready to serve the pancakes, pour Peach Topping mixture into a gravy boat.
The Peach Topping has a really nice, thick and chunky consistency.
To serve: place pancakes on a plate. Top with some of the peach topping.
I love peaches and as you can tell I slopped on a lot of Peach Topping!
These pancakes were delicious–down to the last bite.

GLUTEN FREE PEACH PANCAKES WITH PEACH TOPPING

Gluten Free Peach Pancakes with Peach Topping
Equipment
- 1 large skillet or griddle
- 1 large mixing bowl
- 1 whisk
- 1 medium sauce pan
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 paring knife
- 1 potato masher
Ingredients
PANCAKES:
- 1 cup Cup4Cup Gluten free flour or other good gluten free flour
- 1 large egg
- 1 cup 2% milk
- 2 tbsp. coconut oil
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 large peach peeled
PEACH TOPPING:
- 3 large peaches peeled
- 1 tbsp. vanilla extract
- 1 tsp. cinnamon
- 1/3 cup granulated sugar or honey
Instructions
PANCAKES:
- Prepare Peach Topping.
- Meanwhile, whisk gluten free flour, egg, milk, oil and vanilla together until no longer lumpy.
- Stir in peaches.
- Heat skillet or griddle.
- Add a tablespoon or two of butter or coconut oil to grease pan/griddle.
- Pour pancake mixture into pan.
- Turn when top starts becoming bubbly on the surface.
- Cook another few minutes to brown the other side.
- Makes six five-inch pancakes.
- Serve with Peach Topping.
- To assemble, place pancakes on plate.
- Spoon peach topping over pancakes.
