Sweet Potato Fries

I have my wonderful daughter-in-law, Candice, to thank for this super easy, healthy, and delicious recipe.  Only 3 ingredients–sweet potatoes, cinnamon, and olive oil! Hey, I can manage that! The hardest part about this recipe is cutting the sweet potatoes in slices. Be careful that the knife doesn’t slip and you end up slicing your fingers! As I said earlier, it is really healthy, and so very tasty. You get a lot of fiber, too. It’s not high in calories and it’s a great way to eat clean.

I’m not sure where Candice found this recipe — whether on the Food Network, allrecipes.com or perhaps some website for healthy fitness and eating. But since she gave me the recipe she gets credit for it.

Here’s what I did.

Peel sweet potatoes with a vegetable peeler. Three large potatoes like this made 2 complete layers of French fries in a 9×13″ baking dish.

Slice potatoes as narrowly as you can. Be careful you don’t cut yourself! Sweet potatoes are very hard to cut through. Go easy and take your time.

Take each slice and slice again as pictured above.

Take the individual slices and cut again in half or thirds lengthwise to get narrow French fry shapes.

These are the only ingredients you need for this recipe.

Spray 9×13″ baking dish with olive oil cooking spray. Spread one layer of sweet potato fries in single layer over bottom of pan. Using a small amount of olive oil (start with 1/4 cup), dip brush in oil then brush onto potatoes in casserole dish.

Sprinkle heavily with cinnamon.

Add another layer of potatoes, brush with olive oil and sprinkle again with cinnamon.

Bake at 450 for about 30 minutes. (I was trying to get them done fast. You can cook them longer at a slower temperature especially if you have other dishes to go in the oven at the same time).

SWEET POTATO FRIES

(Recipe from my daughter-in-law, Candice, Oxford, PA)

 

3 large sweet potatoes

Olive oil

Cinnamon

 

Peel potatoes with a vegetable peeler. Slice each potato into 5 or 6 slices lengthwise. Slice each individual slice again in 5 or 6 slices. Slice each individual piece again in half or thirds to make French fries. Spray the bottom of a 9×13” baking dish with olive oil cooking spray. Place one layer of sweet potato fries in pan. Brush with olive oil (start with about ¼ cup). Sprinkle heavily with cinnamon. Repeat layer one more time, brush with olive oil again, and then sprinkle with cinnamon. Bake at 450° about 30 minutes or at 350° about 45-60 minutes or until done. Serves 6.

A delicious, healthy, low calorie side dish even your kids will love. We cleaned the dish out pretty well by the time I got back to taking pictures!

    Teresa, we make something similar to this, but we add a bit of garlic and onion power, cumin and cayenne pepper. Great cooked over a charcoal fire on the grill using a basket. Also easy.

      This sounds wonderful. I’ll have to try it this way sometime. I love all the spices. Next time I make it I think I will add these different spices and see how it turns out. Thanks for the tip! And thanks for stopping by my blog.

      They are so delicious. Very healthy way to eat sweet potatoes. You can eliminate the olive oil if you want, but It is good with it too. Just be careful when you slice the sweet potatoes initially. It is very difficult….or maybe I’m just a wimp!
