Chewy Chunky Brownies
Wow, Chewy Chunky Brownies are awesome! What a fabulous recipe this turned out to be! Chocolate chips, coconut, walnuts, and Heath Bar English Toffee Bits are what makes these delicious brownies so spectacular and decadent. If you’re looking for a superb brownie to make for special occasions, holiday baking, or just because, this is the bar for you!

I found this recipe in Dorie Greenspan’s cookbook, Baking–From My Home to Yours. A couple of years ago I was browsing through my daughter-in-law’s copy of this cookbook. As I looked through the ingredients, I copied the recipe out to try sometime.
Little did I know it would take 2 years before I actually tried them! But, oh, am I glad I did. These fragrant and fantastic brownies smelled so wonderfully as they were baking. And as I was cutting them. The smell was heavenly. I highly recommend these delicious brownies. You may also want to consider buying Dorie’s cookbook! It includes some delicious mouth-watering recipes.
Chewy Chunky Brownies are very similar to my Paula Deen recipe for “Ultimate Chocolate Chip Toffee Cookies.” With the exception that Paula’s recipe doesn’t have the coconut. I find the coconut an exceptional addition, and I think you will too. I made only minor changes to this recipe. It is an excellent brownie. Consider making a batch of these spectacular brownies for your holiday baking this year!
I initially posted this recipe in November 2012. I was using an iPhone 3 camera, because that’s all I had to work with. The pictures were grainy, dark, blurry and completely unappealing! I really enjoy this recipe. It’s so good I thought I would remake it again for some friends who recently had a baby (October 2014).
I retook the pictures and believe you can now see more accurately what these brownies actually look like. They are ooey, gooey and delicious!
Chewy Chunky Brownies are spectacular. They are loaded with chocolate chips, coconut, Heath toffee bits, and walnuts.
These brownies are really special. Thick, rich, decadent and ones you’ll certainly swoon over!
Each bite of Chewy Chunky Brownies is delectable.
Here’s what I did.
I used these ingredients.
Soften butter in large mixing bowl. Add sugar, brown sugar, eggs, baking soda, baking powder, salt and vanilla.
Mix all ingredients together.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chocolate chips, Heath toffee bits, coconut and walnuts.
Stir all ingredients together with a wooden spoon.
Spray 9×13″ baking dish with cooking spray. Spread mixture into prepared baking dish.
Bake the brownies 40 minutes at 350.
This is a great dessert for tailgating parties, potlucks or any family gathering.
Chewy Chunky Brownies are fully loaded. Every bite will have you drooling.

CHEWY CHUNKY BROWNIES
(Recipe adapted from Dorie Greenspan, Baking—From My Home to Yours)
Chewy Chunky Brownies
Equipment
- 1 large mixing bowl
- 1 electric mixer
- 1 9x13" glass baking dish
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 nut chopper if nuts are not previously chopped
- 1 spatula
Ingredients
- 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt or Kosher salt
- 2 sticks unsalted butter softened (1 cup)
- 1 1/2 cups light brown sugar packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 1 cup chocolate chips
- 1 cup Heath English toffee bits
- 1 cup chopped walnuts
- 1 cup coconut
Instructions
- Mix butter, sugars, eggs, vanilla, baking soda, baking powder, and salt.with an electric mixer until smooth.
- Stir in flour, chocolate chips, toffee bits, walnuts, and coconut.
- Spray a 9x13” baking pan with cooking spray.
- Spread mixture into pan.
- Because this mixture is very sticky I had to use a little flour to pat the ingredients down into the pan.
- Bake about 40 minutes at 350°.
- Cool.
- Cut into bars.

Chocolate and toffee never tasted as well together as in these scrumptious brownies. 🙂

I made these today and they we’re so delicious!! The chewy texture was amazing. I made them with pecans instead of walnuts and I also added Reese‘s peanut butter chips. It was truly hard not to eat the whole pan in one sitting. Very dangerous! I will definitely be making these again and again!

I am so glad you liked them!!!! It’s always good to hear reports from others that they enjoy them too. You will love the peanut butter swirl bars, too, and they are the fastest brownie recipe I have to put together.
If you want some ideas for some of my BEST bars, try these two: Chunky Blond Brownies – if you don’t want to spend so much money using macadamia nuts just substitute walnuts or pecans. The second one is my cream cheese brownies.
Both of these recipes are to die for. These are the recipes that most of our company really rave over.
