Cucumbers in Sour Cream is a really easy and tasty side salad that’s great to offer in the summer time when you have an abundance of cucumbers from your garden or your CSA. It’s a light, cool, refreshing way to eat cucumbers and so simple to make even a child can make this.

This recipe was from my husband’s family and he actually made this recipe, along with a full-course meal, for my 21st birthday. I still remember that menu: BBQ Spare Ribs, Baked Potatoes, Green Beans, Carrots, Cucumbers in Sour Cream, Rolls, and a Chocolate Cake. Yum.

I was so impressed because I could barely boil water and John made this amazing meal with all these great side dishes. John’s grandma used to make this when he was growing up. I’ve added a few things but mostly kept the salad the way he made it all those long years ago.

If you’re looking for a wonderful side salad to serve at a salad luncheon, for summer time meals when you don’t want to operate your oven, or even potluck dinners this simple and easy recipe is a good fit. It only takes about 10 minutes to prepare, then refrigerate it until ready to serve. Our family has always enjoyed this basic cucumber recipe, and I hope you do too.

When I initially posted this recipe in April 2013 it was right before I began taking pictures with my new Canon camera. Consequently all the pictures were taken with an iPhone 4 so they were grainy and blurry.

I’ve been remaking all my first year blog recipes, so when we had a big potluck at our church last month (May 2015), I decided to make up a batch of these cucumbers. I was thrilled with what a big hit this cucumber dish was with everyone. Plus, Cucumbers in Sour Cream is healthy, low calorie and gluten free.

John’s grandma passed on this recipe although she never used dill weed.

Cucumbers in Sour Cream has a creamy texture. This salad is so refreshing served in the summer when the temperatures are hot. However, cucumbers can be purchased all year round so you can make this anytime.

Here’s what I did.

I used these ingredients.

Peel and slice down the cucumbers. Place cucumbers in a medium-sized bowl.

Thinly slice down a small onion and separate the onion into rings (or dice up green onions). Add on top of the cucumber.

In a separate bowl, make sauce: Measure sour cream. Add apple cider vinegar, dill weed, salt, pepper and sugar.

Whisk sauce ingredients to combine.

Pour sauce into bowl with cucumbers.

Stir well until onions and cucumbers are combined.

  • 1 salad bowl or mixing bowl
  • 1 sharp knife to cut vegetables
  • 1 small mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 vegetable peeler
  • 1 whisk

Ingredients
  

  • 3 cucumbers peeled and sliced
  • 1 medium onion sliced thinly and separated into rings
  • 1 cup sour cream
  • 1/4 cup apple cider vinegar
  • 1/4 cup granulated sugar
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper or more to taste
  • 1/4-1/2 tsp. dill weed if desired

Instructions
 

  • Layer cucumbers and onion in bowl.
  • Mix sour cream, vinegar, sugar, salt, pepper and dill weed in a small bowl with a whisk.
  • Pour over cucumbers and onions.
  • Stir to combine.
  • Refrigerate until ready to serve.
  • Stir a few times before serving to marinate cucumbers.

Notes

NOTE: Although Grandma never used dill weed, we've always liked the addition in this recipe when we make it.

    This is AMAZING tasty and super quick, easy recipe! I used 4 larger sized pickle cucumbers. Didn’t do dill weed and used less salt/ pepper than called for. It’s marinating for a few hours now.

    This has been a multigeneration recipe for our family too, starting with my great-grandmother back in the middle of the 1800’s. My grandmother taught me “how” in the late 1960’s and it has been in continual use with my husband and I still. Can’t get any of our kids to continue on as all of them (including grandkids!) just want fresh plain vegetables, cut up with mass amounts of dips and heaven forbid, no onions (green) or radishes! I’ll make a double/triple of this using 6 cucumbers and three large sweet onions. Crazy inflated food prices have caused me to cut back on some vegetable “treats” but not this one. No dill (husband does not like and family never used) ever and very low amount of sugar. Perfect. Small garden next year.

    This is a favorite “go-to” dish when my garden is giving me lots of cukes. I take it to a whole other level by adding lots of FRESH dill. I also use less sugar. Give it a try!

    My daddy made a similar one using dill pickle juice instead of vinegar and no sugar. Sometimes used Hellman’s if we didn’t have sour cream. It’s a favorite!

    I substituted the sugar with no carb stevia this brought the calories down to 83 and the carbs down to 3 grams per serving. Would be a good fit for a Keto diet

    Very close to my mom’s “sour cream and cucumbers” recipe. We made a meal of of it, by pouring the wilted cukes onions and cream over boiled butters potatoes, then mushed them up a bit…..memories

    Absolutely perfect!!! I used truvia instead of sugar and it comes out so good! I added a little less apple cider vinegar the second time I made it! Both were good. It depends on your taste!

    My grandma always “wilted” the slices of cucumbers and onions in a bowl by sprinkling a couple tablespoons of salt over top and mixed. She let them sit for 20-30 minutes then placed them in a colander and ran water over them to rinse salt off. Then all she added was sour cream to cover and mixed well. I Can’t stay out of them.

      Hi, Kayla. I’m sorry you didn’t like it. With the vinegar in the dressing I may have amped up the sugar more than some like. I’ve never enjoyed really tart salad dressings. I hope you enjoy it more with reduced sugar.

    my grandma made something identical to this, only without the dill, like your grandma, and she used Hellmann’s instead of sour cream!! just bought cucumbers and onions yesterday to make this recipe!! now.. i’m going to try it with the greek yogurt too like denise suggested!!

      My family has been making this recipe as far back as my great grandmother. We slice the cucumbers and onions thinly and wilt them with salt for about 30 minutes and then rinse them. Instead of sour cream we use reg or heavy cream. So good! For a lighter version I sometime use half and half and it is still good.
