Brickle Brownies
These delicious Brickle Brownies are spectacular to say the least! Each one is filled with loads of Heath English Toffee Bits for a luscious chocolaty toffee flavor. They are gooey and chewy and so scrumptious you won’t be able to put them down. Brickle Brownies will surely satisfy every sugar craving. They are quick and easy to prepare and wonderful for potlucks, holiday baking, or anytime you need to bake up a quick dessert.

The first time I made this marvelous recipe I made them as cookies for one of our Christmas Cookie Extravanzas. They were very well received by all our recipients. This time I didn’t have time to make cookies so I just threw all the ingredients into a baking dish and baked the recipe up into brownies instead. They were perfect. The recipe is another one of those that I got off the package of a Heath English Toffee Bits package years ago. That’s my favorite place to find recipes! These were a big hit at the dentist’s office when I took them a little goodie package last week.
This is a fabulous brownie recipe. If you enjoy the taste of Heath English Toffee Bits, then consider making up a batch of Brickle Brownies (or cookies) soon. You and your family will definitely enjoy these.

I love the chewy texture of these goodies as cookies or brownies.
Drizzling caramel syrup over top makes them just about perfect. The toffee flavor permeates these amazing brownies.
Here’s what I did.
I used these ingredients.
Place sugar, brown sugar, softened butter, eggs, cream of tartar, baking soda, salt and vanilla in a mixing bowl.
Mix with an electric mixer to combine.
Add UNBLEACHED all-purpose flour (bleached flour toughens baked goods). Add Heath English Toffee Bits.
Stir with a wooden spoon to combine.
Grease or oil a 9×13″ glass baking dish. Spread batter into dish and smooth down with the back of a spoon.
Bake at 350 for 50-55 minutes or until toothpick inserted in center comes out clean.
Serve plain or drenched in your favorite chocolate or caramel sauce.

Brickle Brownies
Equipment
- 1 9x13" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 3 large eggs
- 1 tsp. vanilla extract
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 1/2 tsp. kosher salt or sea salt
- 3 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 8 oz. pkg. Heath English toffee bits
Instructions
- Mix butter, sugars, eggs, vanilla, cream of tartar, baking soda and salt with an electric mixer until smooth.
- Stir in flour and Heath English Toffee Bits with a wooden spoon until well combined.
- Spray a 9x13” glass baking dish with cooking spray.
- Spread brownie mixture into pan.
- Smooth the top with the back of a wet tablespoon until surface is smooth.
- Bake at 350° for about 50-55 minutes or until a toothpick inserted in center comes out clean.

These were very easy and I was craving toffee! However, mine were done at the 30minute mark. Toothpick clean and brown on top. I’m so glad I checked them because another 20 minutes would have ruined them. I’ve never had an issue with oven temp/time accuracy, so I’m wondering if the 350 temp is correct?

Hi, Caroline. Every oven cooks differently. Unfortunately, mine is notoriously slow! I’ll add a note to the recipe, but mine actually took that long to bake. So glad you enjoyed them.

I made these which were fast and easy other than the baking time. We ate them hot and then warm and I could really taste the baking soda and cream of tartar. I hope they taste better when at room temperature. The batter was yummy.

Hi Stacey. I followed the recipe pretty closely to the original recipe on the package. But you’re right, two teaspoons each of baking soda and cream of tartar does seem excessive for this amount of batter. I cut the amounts back to one teaspoon of each. Thanks for bringing this to my attention.
