I started with one of my favorite Chocolate Chip Cookie recipes. I swapped out white chocolate chips for the chocolate chips. Then I added coconut and dried cherries. Yum.

I made these festive cookies last month to take to my dentist’s office staff for my regular six-month dental cleaning. They love getting sweet treats from their patients. I love making goodies for them. We’ve been going to that office for 18 years so we know everyone quite well. They all have a sweet tooth so they look forward to our visits! They loved these jewels.

Make up a batch of White Chocolate Cherry Coconut Cookies and you will have a bunch of happy campers residing in your home!
Here’s what I did.
Soften butter. Add sugar, brown sugar, eggs and vanilla.
Dissolve baking soda in hot water, add mixture with salt to other ingredients in mixing bowl.
Cream ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add coconut and white chocolate chips.
Add dried cherries.
Stir with a wooden spoon until well combined.
Spray cookie sheets with cooking spray. Roll dough into balls and place on prepared cookie sheets.
Bake at 350 for about 15-17 minutes or until done.
White Chocolate Cherry Coconut Cookies are soft and chewy.

WHITE CHOCOLATE CHERRY COCONUT COOKIES
(Recipe inspired from my niece, Heather’s Best Chocolate Chip Cookies)
White Chocolate Cherry Coconut Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 large cookie scoop
- 1 spatula
Ingredients
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs
- 2 tsp. vanilla extract
- 3 1/2 to 4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 tsp. baking soda
- 2 tsp. hot water
- 1/2 tsp. salt
- 2 cups white chocolate chips
- 1 cup coconut
- 6 oz. dried cherries
Instructions
- Preheat oven to 350°.
- Dissolve baking soda in hot water.
- Set aside.
- Cream together the butter, white sugar, brown sugar, eggs, vanilla, salt and baking soda mixture with an electric mixer.
- Stir in flour, white chocolate chips, dried cherries and coconut with a wooden spoon until ingredients are very well combined.
- Roll into balls and place on cookie sheets that have been sprayed with cooking spray.
- Bake 15-17 minutes at 350° or until done.
- Rotate cookie sheet pans on oven racks every seven minutes of baking time.
- Cool completely.

These are awesome just as the recipe is written and have the right balance of soft chewy with crispy edges and wonderful flavor. Since they did not last long I made a second batch but added the zest of one orange to take them up a notch. Not that the 2 teaspoons of vanilla in the original recipe did not provide enough flavor, but the orange zest added a little more holiday pizzazz.
