White Chocolate Cherry Coconut Cookies have it all! White chocolate chips, check. Coconut, check. Cherries, check. Texture, check. Chewiness, check. Taste: outrageous, check! I started with one of my favorite Chocolate Chip Cookie recipes. I swapped out white chocolate chips for the chocolate chips. Then I added coconut and dried cherries. Yum.

White Chocolate Cherry Coconut Cookies are incredible. If you’re a chocolate lover, a cherry lover and a coconut lover, you will adore these lovely cookies. Plus they’re perfect for holiday parties and Christmas Cookie Exchanges. But since they’re made with dried cherries, they can be made anytime of the year.

I made these festive cookies last month to take to my dentist’s office staff for my regular six-month dental cleaning. They love getting sweet treats from their patients. I love making goodies for them. We’ve been going to that office for 18 years so we know everyone quite well. They all have a sweet tooth so they look forward to our visits!  They loved these jewels.

  1. Preheat oven to 350°.
  2. Dissolve baking soda in hot water.
  3. Set aside.
  4. Cream together the butter, white sugar, brown sugar, eggs, vanilla, salt and baking soda mixture with an electric mixer.
  5. Stir in flour, white chocolate chips, dried cherries and coconut with a wooden spoon.
  6. Roll into balls and place on cookie sheets that have been sprayed with cooking spray.
  7. Bake 15-17 minutes at 350° or until done.
Recipe Notes

NOTE: I accidentally over-softened the butter so I ended up using extra flour to compensate. I recommend using about 3 1/2 cups of flour normally.

  • 4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
