Chicken Fajitas
I’ve always loved Chicken Fajitas. From the first time I ate them when we moved to Texas I’ve enjoyed this Tex-Mex entree. I’ve made them a lot over the years because overall, they’re really quite simple to make. At times I’ve used pre-packaged marinated chicken meat as well as Taco Seasoning in a packet to speed the process along.

Nowadays, however, with kids long gone and grown up, and being a stay-at-home wife, I have the luxury of making up a lot more stuff from scratch. It helps me eat cleaner without all the processed foods and preservatives. For this recipe, I dredged four boneless chicken breasts in a batch of my Homemade Taco Seasoning and that provided the awesome flavor for these fajitas. The spices mix in with the meat as well as the veggies and the outcome is superb.
Seriously, it takes only two minutes to make up Homemade Taco Seasoning. I make it all the time for Tex-Mex stuff. It’s healthier and without all the preservatives that come in a packet. Plus, you can make batches of it and store it in the pantry or freezer for later if you’re concerned about time constraints. After frying the chicken to a nice brown, then I added all the veggies: red, green, orange and yellow bell peppers, red onions and garlic. That’s pretty simple.
The accompaniments are what make this dish great. We’ve always spread the tortillas with sour cream. Then you can add cheese, salsa, guacamole, rice, beans, cilantro, lime and avocados to the fajita mixture in any amounts you prefer. Normally, I would have made a homemade salsa too, but didn’t have time. Pico de Gallo is also great for this recipe. I actually eat fajitas without the tortilla to keep them gluten free, but most people will prefer eating these with tortillas. H-E-B grocers makes a quality homemade tortilla from scratch in their Texas stores. They are our preferred tortillas.
I served this amazing recipe for our Friday night care group back in August. Everyone marveled at the flavors of the chicken and veggies. The Homemade Taco Seasoning did the trick! While I served the main course, our company brought the rice, beans, homemade guacamole and other goodies to complete our meal. As it happened, I had some leftover Million Dollar Pie so, needless to say, we had a very happy dinner night that night. 🙂
Just one recommendation: this is ONLY enough seasoning to coat four chicken breasts. If you need to feed more and use more chicken breasts, you will need to increase the amount of seasoning accordingly.

Chicken Fajitas are a family favorite.
Chicken Fajitas are wonderful served with avocados, lime, cheddar cheese, sour cream, cilantro and salsa.
We also added rice, beans and guacamole! A match made in heaven. 🙂
This is a terrific recipe for company.
Here’s what I did.
I used these ingredients for the fajita filling.
Make up the Homemade Taco Seasoning. If you have all the ingredients on hand, this only takes 1-2 minutes.
Combine taco seasoning ingredients. Dredge chicken breasts in taco seasoning to coat well.
Heat skillet to medium-medium-high. Add olive oil to skillet. Place chicken pieces in skillet and cook until well browned.
Turn chicken over and cook that side until well-browned. (This will probably take 5-10 minutes on each side depending on how thick the chicken breasts are).
Remove chicken from skillet to plate or cutting board. Allow chicken to rest about 10 minutes before cutting down into strips. (I used an electric knife to cut the chicken. It cuts in clean strips without shredding the chicken while you’re cutting it).
Meanwhile, in leftover olive oil in skillet, add bell peppers cut in strips, red onion strips and garlic.
Saute veggies until tender but not overcooked.
Here the veggies are cooked.
To serve: add meat to skillet with veggies.
These are some of the ingredients I used to assemble the fajitas. I also used guacamole, rice and beans. You can make homemade salsa, if you prefer.
To serve: we spread each tortilla with sour cream. Add chicken and veggie fajitas, avocados, cheddar cheese, sour cream, cilantro and salsa as desired.
You can also serve this with fresh, sliced jalapenos if you dare!
These Chicken Fajitas were outstanding. No matter what garnishes we added on top, everything was wonderful.
Serve this delightful entree the next time you have company! It’s really easy and delicious.

CHICKEN FAJITAS
(My own concoction)
Chicken Fajitas
Equipment
- 1 small mixing bowl
- 1 large skillet
- 2 sharp knifes to cut vegetables and chicken
- 1 spatula
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 4 chicken breasts boneless, skinless
- 1 pkg. taco seasoning mix or homemade taco seasoning
- olive oil as needed
- 1 large red onion cut in thin, long strips
- 1 red bell pepper cut in long strips
- 1 orange bell pepper cut in long strips
- 1 yellow bell pepper cut in long strips
- 1 green bell pepper cut in long strips
- 2 cloves garlic finely minced
- 1 avocado sliced
- 12 flour tortillas warmed, if desired
- 1 cup sour cream as desired
- 1 cup salsa as desired
- 1 cup sharp cheddar cheese shredded, as desired
- 1 tbsp. fresh cilantro torn, as desired
- 2 fresh limes as desired
- 1 cup guacamole if desired
- 2 cups Cooked rice or Spanish rice, if desired
- 2 cups cooked refried beans if desired
Instructions
- Combine chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper.
- Rub on chicken pieces.
- Heat olive oil in a large skillet.
- Add chicken pieces and cook until well-browned.
- Turn chicken over and cook remaining side.
- Remove chicken to cutting board and allow to set about 5-10 minutes before slicing down on the diagonal.
- To skillet add additional olive oil, bell peppers, onions and garlic.
- Sauté a few minutes turning frequently until veggies are tender.
- Add sliced chicken to pan.
- To serve: Spread sour cream on each tortilla.
- Add meat and veggie mixture.
- Dollop with salsa.
- Add cheese and avocado slices.
- Sprinkle with cilantro and drizzle with fresh lime.
- If desired, add guacamole, rice and beans.

I made this recipe recently, as the pictures looked delicious and the recipe seemed pretty simple, as I am not a proficient cook. This is one of the best meals I have ever made in my life. The chicken turned out perfectly, with so much flavor. The fajitas were so easy to make and tasted absolutely incredible. I will make this recipe over and over again!
