Cherry Almond White Chocolate Cookies
I love cherries, and these scrumptious Cherry Almond White Chocolate Cookies are terrific. I start with my favorite Mrs. Field’s copycat chocolate chip cookie dough. Instead of regular chocolate chips I substitute REAL white chocolate chips, add candied cherries and slivered almonds. Yes, they are absolutely wonderful.

Cherry Almond White Chocolate Cookies are beautiful, elegant and festive enough for any holiday or Christmas tradition. I made them for our annual Christmas Cookie Extravaganza this year and they were quite popular. I love using candied cherries in recipes during the Christmas holidays. I always have to find at least one recipe to bake that includes them. These cookies with their delicate almond flavoring and crunch were just about perfect.
For the ultimate flavor, make sure you pick up a package of real white chocolate chips, NOT vanilla chips or premiere white baking chips. Those chips have no cocoa in them and they are NOT white chocolate chips. My preference is slivered almonds but sliced almonds will also work. I have to admit, I love cherries–especially in cookies and cakes.
I have favorite cherry cookie recipes with coconut & pecans, one with coconut and white chocolate, one with just white chocolate, one buried in a snowball, one with fresh cherries, one Black Forest style, another as a bar with sliced almonds, and one like truffles. Yes, hand me something with cherries and I gobble it up in no time. If you’re a cherry lover, you’ll love these cookies. If you have an important party coming up during the holiday season or want a delicious cookie to have around the house on Christmas afternoon, these cookies will do it. But don’t plan on having any leftovers. These cookies are so delicious you will find everyone downing two or three at a time. They will disappear almost immediately…. 🙂

These festive cookies are marvelous for holiday parties and Christmas Cookie Exchanges.
Cherry Almond White Chocolate Cookies make an elegant Christmas dessert.
Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, eggs, vanilla, sea salt, baking powder and baking soda.
Mix ingredients with an electric mixer until smooth and creamy.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add slivered almonds, white chocolate chips (not vanilla chips) and diced candied cherries.
Stir ingredients thoroughly with a wooden spoon to combine.
Spray cookie sheets with cooking spray. Roll cookie dough into balls and place on prepared cookie sheets.
Bake at 350 about 15 minutes or until done. (I was baking four cookie sheets at a time with 24 cookies per cookie sheet. My cookies took 20-24 minutes. I rotated the pans every eight minutes).
Don’t expect to take a tray to your office and come home with any leftovers!

CHERRY ALMOND WHITE CHOCOLATE COOKIES
(My own concoction)
Cherry Almond White Chocolate Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
- 1 sharp knife to chop cherries
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 1/2 cup granulated sugar
- 1 1/2 cups brown sugar packed
- 2 large eggs
- 2 1/2 tsp. real vanilla extract (no imitation vanilla flavoring)
- 3 1/2 to 3 3/4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 3/4 tsp. sea salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 cups candied cherries diced
- 2 cups white chocolate chips not vanilla chips or premiere white baking chips
- 1 cup almonds slivered
Instructions
- Preheat oven to 350°.
- Chop cherries.
- Set aside.
- In a large mixing bowl, mix the butter, sugars, eggs, vanilla, salt, baking powder and baking soda with an electric mixer until smooth.
- Stir in flour, chopped cherries, white chocolate chips and almonds with a wooden spoon to thoroughly combine.
- Stir thoroughly; this may take 4-5 minutes.
- Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
- Bake for 13-15 minutes or until edges are light brown.
- Rotate cookies on racks every six to eight minutes while baking.
- Cool completely.
