I know it’s kind of strange to rave over Cabbage Soup, isn’t it? Yet, this was the tastiest version of Cabbage Soup I’ve ever eaten. The broth base of chicken broth with stewed tomatoes and thyme was a real winner for me. Leeks, garlic and onions add the finishing touches for flavor. I loved this recipe. 🙂

Late last fall, my husband fixed a neighbor’s flag mount on their house because it had broken off due to high winds. They purchased a new one and John drilled the holes and remounted it. We get really high winds here in North Dallas so we have to bring our flags in frequently or the mounts will break off from the house!!! Anyway, she was so kind as to bring us a batch of this recipe as a “thank you” for installing the mount so she could hang her flag.
I asked her a couple of times for the recipe. Imagine my surprise when I found out that the recipe originates from a blog I follow and pin from very frequently! I only made two changes to the original recipe. I added a leek (because leeks, like bacon, make everything better in my opinion!) I also reduced the pepper for our tastes.
As I stated earlier, this is the BEST Cabbage Soup recipe we’ve ever eaten (and we’ve had a variety of them). This recipe can be whipped up in less than 45 minutes. Additionally, if you need to make the entree vegan, you can easily substitute vegetable broth for the chicken broth in the recipe.
A hot bowl of soup on a cold day (or night) is the best comfort food. 🙂 While the recipe is gluten free, it’s so great with homemade bread or rolls. I served it with my Easy No Knead Dinner Rolls and some Parsley, Sage, Rosemary and Thyme Dinner Rolls (think Simon and Garfunkel circa the 1960s and 1970s). 🙂 Nothing could be better. Yum.
We loved this Cabbage Soup recipe and were so glad that our neighbor shared it with us. Easy No Knead Dinner Rolls set off the soup wonderfully. A few days later I made a batch of Parsley, Sage, Rosemary and Thyme Dinner Rolls. Those were fantastic with this soup recipe too!
I added a leek and decreased the pepper slightly from the original recipe. A little sprinkling of thyme on top made it even better. 🙂
I served it with Parsley, Sage, Rosemary and Thyme Dinner Rolls!
Here’s what I did.
I used these ingredients.
Heat olive oil in a Dutch oven over medium heat. Add sliced leeks, onions and garlic.
Stir ingredients and saute about 3-5 minutes.
Add sliced carrots, diced celery and chopped cabbage.
Add chicken broth. You can substitute vegetable broth if you need to keep the recipe vegan.
Add thyme, salt and pepper.
Add stewed tomatoes (undrained).
Stir to combine.
Cover with lid and simmer about 30 minutes.
Add a dash of fresh thyme and bring on the dinner rolls!
This comforting recipe is easy on the palate.
Cabbage Soup is healthy, low calorie and gluten free. I served it with Parsley, Sage, Rosemary and Thyme Dinner Rolls and we were in seventh heaven. 🙂

CABBAGE SOUP

Cabbage Soup
Equipment
- 1 Dutch oven with lid
- 1 sharp knife to cut vegetables
- 1 vegetable peeler
Ingredients
- 3 tbsp. olive oil or avocado oil
- 1/2 yellow onion chopped
- 2 cloves garlic minced
- 1 large leek green top removed, washed thoroughly, sliced
- 8 cups low-sodium chicken broth or vegetable broth
- 1 tsp. sea salt
- 1/2 tsp. dried thyme
- 1/4 tsp. ground black pepper
- 4 cups cabbage chopped in 1 1/2 inch chunks (half a head of cabbage)
- 4 large carrots peeled and sliced
- 2 ribs celery diced
- 14.5 oz. can stewed tomatoes undrained
Instructions
- Heat a large sauce pan over medium heat.
- Add olive oil and heat.
- Then add onions, leek and garlic.
- Cook and stir until onions are translucent, about 3-5 minutes.
- Add remaining ingredients and heat through about 30 minutes.

Cabbage Soup is actually nutritional and will help with any weight loss program. But it really is special when a little home-baked bread is added to the mix!
