Peach Cobbler with Praline Filling is something special. Peach Cobblers have always been one of our favorite desserts. We love cobblers with canned or fresh peaches, but they’re so much better when you can find fresh peaches. That’s not my problem at the moment. I’m being overrun by peaches!

We have six mature peach trees and even with a 50% loss due to birds, squirrels, and worms, we still have tons of peaches! Next year we’ll have to get serious about being peach farmers and figure out ways to reduce the worms and waste. But for now, we still have peaches coming out our ears!

I’ve been busy making cobblers, cakes, pies, cookies and bars for the past couple of weeks as we try to use up some of our peaches. We had a Sunday school class party at a friend’s house a couple of weeks ago and I brought several peach desserts including this tasty recipe.

I had several people tell me this dessert was A-M-A-Z-I-N-G!!! This Peach Cobbler has a homemade peach pie filling on the bottom, then biscuit dough is filled with a praline filling which becomes syrupy and delicious as it bakes. It’s just wonderful.

This is another one of those recipes I clipped out of a magazine back in the very early 1980s. I put it in my cookbook but still hadn’t gotten around to making it. I used to get in ruts with my cooking back in those days and wouldn’t take as many chances with new recipes as I do now. I think I didn’t want  to go to all the work of rolling out biscuit dough, but truly this recipe is worth it.

Place sugar, cinnamon and cornstarch in a medium saucepan and heat over medium heat.

Slowly add water to the dry ingredients in the saucepan.

Add peaches and stir to combine.

Bring mixture to a boil and boil for 3-5 minutes until thick.

Spread peach filling into the bottom of a greased 9×13″ baking dish.

Put UNBLEACHED flour (bleached flour toughens baked goods), into a mixing bowl. Add baking powder, baking soda, salt and sugar. Cut in Crisco shortening with a pastry blender until well mixed.

Add buttermilk or sour milk.

Roll dough out into a rectangle.

Cut dough into 15 one to one-and-a-half-inch pieces.

  • 2 wooden spoons
  • 1 Rolling Pin
  • 1 small sauce pan
  • 1 whisk
  • 1 sharp knife to cut and pare peaches
  • 1 medium mixing bowl
  • 1 pastry blender
  • 1 small mixing bowl
  • 1 large sharp knife to cut biscuit dough into pinwheels
  • measuring cups
  • measuring spoons

Ingredients
  

PEACH FILLING:

  • 4 cups fresh peaches sliced
  • 1 cup granulated sugar
  • 1 heaping tablespoon cornstarch
  • 1 tsp. cinnamon
  • 1 cup water

BISCUITS:

  • 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. granulated sugar
  • 1 tsp. salt
  • 1/3 cup Crisco shortening
  • 2/3 cup buttermilk

PRALINE FILLING:

  • 4 tbsp. butter softened
  • 1/2 cup light brown sugar
  • 1 cup pecans chopped (measure after chopping)

Instructions
 

PEACH FILLING:

  • Combine sugar, cornstarch and cinnamon in medium-sized saucepan until smooth.
  • Slowly add in water and whisk to combine.
  • Add peaches.
  • Bring mixture to a boil over medium heat and boil about 3-5 minutes or until mixture is thick.
  • Remove from heat.
  • Pour peaches into a greased 9x13” baking dish.

BISCUITS:

  • Combine dry ingredients in a mixing bowl.
  • Cut in shortening with a pastry blender until coarse crumbs form.
  • Add buttermilk and stir until a soft ball forms.
  • Knead on floured surface lightly.
  • Roll dough into an oblong about 8x12”.

PRALINE FILLING:

  • Combine ingredients in a small mixing bowl and spread over top of biscuit rectangle.
  • Roll tightly from long end and cut in one-inch slices. (I cut the biscuit dough into 15 slices).
  • Place the slices on top of the peaches in baking dish.
  • Bake at 350° about 30-45 minutes or until biscuits are golden.
  • Serve warm.

Notes

NOTE: To make buttermilk (sour milk), measure milk into a glass measuring cup. Add 1-2 tbsp. vinegar. Allow milk to sit out for about 5 minutes before using in recipe.
