Orange Marmalade Almond Bars
Orange Marmalade Almond Bars are totally terrific. They have a shortbread crust layer, topped with an orange marmalade filling and then generously sprinkled with sliced almonds. I came up with the idea from my Apricot Almond Bars. Orange Marmalade, Cherry or almost any other flavor works well in this delightful recipe.

I grew up eating lots of oranges. We had a navel orange and a tangelo tree in our yard growing up in Florida. My mom planted them along with a lemon tree and a couple of apple trees when we first moved there. We ate oranges all through the spring and summer months, just pulling them off the tree when we wanted to.
Mom also used to make this really thick, pulpy juice that we would freeze and eat with a spoon out of the jar in the heat of summer to cool off. Back in those days all kids played outside. There were no electronic gadgets and my folks didn’t want us inside watching TV all day long. So instead of popsicles, we ate Mom’s orange pulp to keep cool. We loved it and I grew up loving orange-flavored foods as a result.
I had half a jar of Orange Marmalade leftover after making Glazed Orange Marmalade Chicken a month or so ago. I decided to try this recipe and see how it turned out. It was amazing. The bars were rich and gooey, just the way we like them. I do suggest, however, that you either freeze or refrigerate the bars before cutting as they are so gooey otherwise.
Orange Marmalade Almond Bars are a great option for holiday baking, but you can make these scrumptious treats any time of the year. I guarantee your family and friends will surely appreciate every batch of these goodies.

Orange marmalade and almonds make an incredibly delicious cookie.
Orange Marmalade Almond Bars will have you drooling from the first bite.
Here’s what I did.
I used these ingredients.
Soften butter. I microwave it until it’s half way between softened and melted. Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add powdered sugar.
Stir ingredients to combine.
Pat ingredients into a greased 9×13″ glass baking dish.
Bake at 350 for 15-18 minutes.
Combine orange marmalade, sugar, egg, vanilla and butter.
Whisk ingredients to combine.
Spread orange marmalade filling onto hot crust.
Sprinkle filling with sliced almonds.
Bake at 350 an additional 15-20 minutes until set.
It’s much easier to cut these bars if you freeze or refrigerate the bars first.

ORANGE MARMALADE ALMOND BARS

Orange Marmalade Almond Bars
Equipment
- 1 9x13" glass baking dish
- 2 mixing bowls
- 1 wooden spoon
- 1 whisk
- measuring cup
- measuring spoons
- 1 spatula
Ingredients
Crust:
- 1 ½ cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- ¾ cup confectioners’ sugar
- ¾ cup unsalted butter softened or melted, (I prefer the butter half way between melted and softened)
Topping:
- 1 large egg lightly beaten
- ½ cup granulated sugar
- 8-10 oz. Orange Marmalade preserves
- 1 tbsp. unsalted butter softened or melted
- ½ tsp. vanilla extract
- ¾ to 1 cup almonds sliced
Instructions
Crust:
- In a mixing bowl, stir flour, granulated sugar and butter.
- Spread into the bottom and ½ inch up the sides of a 9x13” glass baking dish that has been sprayed well with cooking spray.
- Bake at 350° oven for 15-18 minutes or until lightly browned.
Topping:
- For topping, beat egg, granulated sugar, preserves, butter and vanilla in a mixing bowl with a whisk until smooth.
- Spread evenly over hot crust.
- Sprinkle with almonds.
- Bake at 350° for 15-20 minutes.
- Cool.
