
Jalapeno Cheddar Roll Ups
Jalapeno Cheddar Roll Ups are A-M-A-Z-I-N-G!!!! These tasty Tex-Mex-style pinwheel appetizers have refried beans, diced tomatoes with chilies, diced red pepper, green onions, cheese, and fresh cilantro in a cream cheese-sour cream base. I rolled these spicy pinwheels in Jalapeno Cheddar wraps which provided some nice heat in addition to the green chilies in the recipe. They were marvelous!

A couple of weeks ago when I was making treats for our Vacation Bible School workers at church, I made up one of the pinwheel appetizer recipes and realized it was only going to make about two dozen pinwheels total. I knew that was not going to be enough to feed our hearty-eating crew and it was getting late at night so I had to see what I could come up with on the fly.
I raided my pantry, and this recipe is what came out of that spur-of-the-moment throw-everything-in-the-pot sort of pinwheels. Jalapeno Cheddar Roll Ups exceeded my expectations! And those I served them to really loved them too.
Jalapeno Cheddar Roll Ups are really quite easy to make, too. I had the whole batch ready to be refrigerated in about 20-30 minutes. Plus, one batch provides about four dozen or more pinwheels which is a great amount if you’re serving these tasty appetizers to crowds.
I recommend serving Jalapeno Cheddar Roll Ups for tailgate parties, when you’re having a roomful of company watching a game on television, or to take to potlucks or family reunions and other get-togethers.
These appetizers are so flavorful with just the right amount of heat from the jalapenos in the wraps and creamy coolness from the sour cream that your company is sure to enjoy them–especially if they like Tex-Mex type food.
If you’re looking for a great tasting wrap or roll up, Jalapeno Cheddar Roll Ups would be great for a family lunch, to take along as snacks for gymnastics or ball practices or even on picnics. You can also serve them as finger foods for a houseful of company, or take a batch to an office meeting or baby shower. These splendid appetizers are hearty, filling, satisfying and really a great comfort food! Serve these with salsa and you are good to go!

Jalapeno Cheddar Roll Ups are wonderful!

These tasty appetizers have just the right amount of heat from the green chilies and jalapeno cheddar wraps. This picture shows the filling in plain tortillas.

The roll ups here are actually made with the Jalapeno Cheddar Wraps.

I ran out of the Jalapeno Cheddar wraps and had to use regular tortillas, and a couple of sun-dried tomato basil wraps. The refried beans give these appetizers a hearty, tasty filling that’s quite satisfying.
Here’s what I did.

See my note at the bottom of the recipe if you prefer to mix the cream cheese, sour cream and refried beans with a mixer first. Pour refried beans into a large mixing bowl.

Add a can of diced tomatoes with chilies, drained and sliced olives and softened cream cheese.

Add sour cream, diced red bell pepper, diced green onions, cheddar cheese and cilantro.

Stir ingredients to combine.

Spread filling to the very edges of the wrap. This mixture tasted wonderfully on Jalapeno Cheddar wraps. Roll up tortilla as tightly as possible without tearing the wrap.

I had to add more of the filling around the edge of the tortilla to get it to seal properly.

Wrap tortillas in plastic wrap and refrigerate a couple of hours or overnight.

To serve: Unwrap plastic wrap from roll ups. Place tortillas on cutting board and cut in 1 or 2-inch slices. Serve with salsa on the side.

JALAPENO CHEDDAR ROLL UPS
(My own concoction)

Jalapeno Cheddar Roll Ups
Equipment
- 1 sharp knife
- 1 mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- plastic wrap
Ingredients
- 15 oz. can refried beans
- 15 oz. can diced tomatoes with green chilies drained
- 8 oz. pkg. cream cheese softened
- 8 oz. bag Monterey Jack/Colby cheese blend shredded
- 2.25 oz. can ripe olives sliced, drained and patted dry
- 1 cup sour cream
- 6 green onions sliced thin
- 1/3 cup fresh cilantro chopped
- 1/2 red bell pepper diced
- 9 Jalapeno cheddar wraps or large tortillas
Instructions
- Soften cream cheese and place in large mixing bowl.
- Add sour cream, refried beans, diced tomatoes with chilies, cheese, olives, green onions, bell pepper and cilantro and stir to combine.
- Spread roll up mixture onto Jalapeno cheddar wraps to the edges.
- Roll up very tightly, but carefully so the tortillas don’t tear; seal the edges.
- Wrap in plastic wrap.
- Refrigerate a few hours or overnight.
- To serve: Cut roll ups in 1 to 2-inch slices.
- Makes about 4 to 4 ½ dozen.
