Pear, Pomegranate and Berry Salad is absolutely delightful, especially when it’s served with homemade Lemon Poppyseed Dressing. We received a gift basket over Christmas that had fresh pears, apples, nuts and other goodies. (ahem, chocolate!) I decided to use some of the pears in a delicious salad. Since John had found some pomegranate arils on sale, I decided to pair the pears with pomegranates, raspberries, blackberries, Swiss cheese and roasted, salted pecans. The combination was heavenly.

I love salads especially tossed salads with fruit. I have lots of tossed salad combinations already posted on this blog. So when I made a Broccoli Salad with Pears and Pomegranates last year that turned out divine, I decided to change it up a little bit and use some of those ingredients with spring mix, cheese and nuts. It turned out just as wonderfully. I chose to use roasted, salted pecans rather than glazed pecans or walnuts. Otherwise, the salad would have turned out too sweet to eat. It needs the contrast of Swiss cheese, nuts and a little tartness from the salad dressing to bring it off.

If you’re in the mood for a fantastic salad that’s a great side to any main dish, you ought to give Pear, Pomegranate and Berry Salad a try. It’s not only festive and beautiful, but healthy and good for you! This salad is a clean eating recipe that’s gluten free and low calorie.

I used these ingredients for the salad, plus lemon juice. I couldn’t find shredded Swiss cheese at the time so I julienned the cheese.

Place spring mix in a large salad bowl.

Slice pears and core. Swish lemon pieces in lemon juice. Drain on paper towels.

Add toasted, salted pecans, raspberries, blackberries, pomegranate arils, pear slices and Swiss cheese.

I used these ingredients for the salad dressing.

Place ingredients in a blender.

Blend about 20 seconds until mixture emulsifies.

Place salad on individual salad plates.

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut fruit
  • 1 small bowl
  • 1 blender

Ingredients
  

SALAD:

  • 11 oz. pkg. spring mix
  • 6 oz. pkg. raspberries
  • 6 oz. pkg. blackberries
  • 1 cup Swiss cheese shredded
  • 1 cup pecans salted and roasted
  • 2 D'Anjou pears cored and sliced (unpeeled)
  • 1 cup pomegranate arils
  • 1/4 cup lemon juice or as needed

LEMON POPPY SEED DRESSING:

  • 3/4 cup avocado oil
  • 1/3 cup lemon juice
  • 1/2 cup honey
  • 1 tsp. pink Himalayan sea salt
  • 1 tsp. dijon mustard
  • 1 tbsp. poppy seeds
  • 1 tbsp. dehydrated onions (or fresh green onions)

Instructions
 

SALAD:

  • Place spring mix in a large salad bowl.
  • Add raspberries, blackberries, Swiss cheese, pecans, and pomegranate arils.
  • Slice pears and swish in a bowl with lemon juice.
  • Drain on paper towels and pat dry.
  • Add pears.
  • Refrigerate until ready to serve.
  • Mix Lemon Poppyseed Dressing.
  • Toss salad.
  • Place on salad plates and drizzle with dressing as desired.

LEMON POPPY SEED DRESSING:

  • Place ingredients in a blender and pulse until thoroughly mixed—about 15-20 seconds.
  • Drizzle over top of individual salad plates when ready to serve.

Notes

NOTE: If you're not using fresh pomegranate (and using pomegranate arils that are already pre-packed from the produce section of the grocery store), you will want to soak the pomegranates in warm water with a few tablespoons of baking soda added. Swish the pomegranate arils in the water and allow to soak about ten minutes. Then rinse well and towel dry before using. This will eliminate any brine taste and smell that the pomegranates are soaked in before packing.
