This Almond Raspberry Tossed Salad turned out delightfully! It’s a very simple recipe using 4 ingredients for the salad and 4 ingredients for the salad dressing. So easy. So delicious. Perfect summer salad for any occasion. It’s also great for special occasions and holidays since it’s so light, refreshing and tasty.

The original recipe didn’t call for blueberries but I added them anyway. My husband thought they were better with the blueberries rather than leaving them out. This delectable salad is healthy, low calorie, gluten free and vegan for those who are watching their diet.
I was contacted by someone in our church and asked to bring a meal to a family in our church that needed some meals. I made them a batch of Paula Deen’s Crockpot Potato Soup, some homemade rolls, this luscious salad and some Candy Bar Brownies. They were so appreciative of the meal and I was glad to be able to do it.
We also enjoyed some of this Almond Raspberry Tossed Salad ourselves. My husband and I both enjoy Tossed Salads with fruit, so anytime I throw together something along that line, we dig in! I could have added some other things to the salad, but decided to leave it with only the addition of blueberries.
I also modified the dressing so it would be healthier. Most of the time, I use avocado oil instead of any other kind of oil for homemade salad dressing. I also substitute honey for sugar. I like processing the ingredients in my Vitamix because it really infuses the ingredients better than whisking alone. Still, this is a tangy dressing even though I increased the honey. So if you want a really sweet dressing, try decreasing the white wine vinegar a little.

This is a fantastic salad for summer salad luncheons.
Here the salad dressing has been tossed with the salad.
Almond Raspberry Tossed Salad is healthy, low calorie, gluten free and vegan.
Here’s what I did.
I used these ingredients for the salad.
Place romaine lettuce in a salad bowl.
Wash raspberries gently in a colander.
Pat raspberries dry between layers of paper towels.
Toss raspberries on top of romaine lettuce.
Wash blueberries in colander.
Pat dry between layers of paper towels.
Toss blueberries on top of salad.
Place almonds on a cookie sheet or roaster pan.
Toast for about 5-7 minutes at 350 degrees. Remove from oven and cool.
Toss cooled, toasted almonds on top of salad. Refrigerate until ready to serve.
I used these ingredients for the salad dressing.
Measure out raspberry jam.
Toss in a blender. Add honey, white wine vinegar and avocado oil.
Puree about 20-30 seconds until ingredients are well mixed.
Pour mixture into a pitcher, cruet or other salad dressing dispenser.
Serve salad dressing with salad and toss to serve; or pour over individual servings and serve.
This light and refreshing salad is terrific for Ladies’ Luncheons.
Almond Raspberry Tossed Salad is excellent for company dinners.
My husband thought this salad was better for having blueberries on it. It adds a little more body to the salad and, of course, delicious blueberry taste!

ALMOND RASPBERRY TOSSED SALAD

Almond Raspberry Tossed Salad
Equipment
- 1 large salad bowl
- 1 blender
- 1 colander
- 1 salad tongs
- measuring cups
- measuring spoons
Ingredients
SALAD:
- 8 cups Romaine lettuce torn
- 1 cup raspberries washed gently and patted dry
- 1 cup blueberries washed and patted dry
- 1/2 cup slivered almonds toasted
RASPBERRY SALAD DRESSING:
- 1/2 cup seedless raspberry jam or preserves
- 1/4 cup white wine vinegar (see note below)
- 1/2 cup honey or more if desired
- 2 tbsp. avocado oil
- 2 tsp. avocado oil
Instructions
SALAD:
- Place almonds on a small cookie sheet.
- Toast in oven or toaster oven at 350º for about 5-7 minutes, until almonds become lightly golden brown.
- Set aside to cool.
- In a salad bowl, combine the romaine, raspberries, blueberries and almonds.
- Refrigerate until ready to serve.
RASPBERRY SALAD DRESSING:
- In a blender, combine the raspberry jam, white wine vinegar, honey and avocado oil.
- Cover and process until smooth and creamy.
- Serve with salad.
- Refrigerate leftovers.
