I made a batch of White Chocolate Spice Cookies back in the summer. The people we gave them to sent me a note back raving about how wonderfully they tasted. That simple four-ingredient cake mix recipe was delightful. Chocolate and Spice Cake Mix really do wonderfully together.
I was planning on making the same basic recipe for our Christmas Cookie Extravaganza this year. But instead of white chocolate chips I wanted to try my hand at butterscotch chips instead. I figured Spice Cake Mix and butterscotch chips would do equally well. I was right. These jewels turned out fantastic.
Then I realized my husband had really overbought on pecans. I mean outrageously overbought. Like 15-20 large bags of pecans. What’s a gal to do? I decided to use up a bunch in this recipe of course. I also made two other Christmas treats with pecans that were not originally on our holiday baking menu. (I’m sure no one will mind).
I made up 16 batches of this recipe and got rid of 16 cups of pecans doing it. I used about 25 cups of pecans in the other two recipes I made. Still, I have several more bags of pecans to get rid of. 🙁 I guess I will be making lots of pies and cookies over the next month or two. 🙂
Butterscotch Pecan Spice Cookies are so quick and easy to make up. If you need to make a dessert in a jiffy, this one is it! The holiday spicy flavors are terrific too. This is great for Christmas Cookie Exchanges or any kind of holiday party. But be warned, you may find yourself baking more than one batch!

These delightful 5-ingredient cookies are terrific for holiday baking.
The flavors of butterscotch and spice cake mix work wonderfully well together.
Here’s what I did.
I used these ingredients.
Pour cake mix into a mixing bowl. Add eggs and oil.
Stir ingredients to combine.
Add pecans and Butterscotch Chips.
Stir again to combine.
Spray cookie sheets with cooking spray. Roll dough into balls and place on prepared cookie sheets. Stud the tops with additional butterscotch chips and pecans so they don’t end up loose in the mixing bowl with no dough left!
Bake at 350 about 13-15 minutes or until done. Rotate cookie sheets on racks every six minutes while baking. (My cookies took 18 minutes to bake completely).
Butterscotch Chips really amp up the flavor of this cookie.

BUTTERSCOTCH PECAN SPICE COOKIES
(My own concoction)
Butterscotch Pecan Spice Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- 1 spatula
- 1 nut chopper if nuts are not previously chopped
- measuring cups
Ingredients
- 15.25 oz. box Betty Crocker Spice Cake Mix
- 1/3 cup canola oil
- 2 large eggs
- 11 oz. pkg. Nestle's Toll House Butterscotch morsels
- 1 cup pecans coarsely chopped
Instructions
- Combine cake mix, oil and eggs.
- Stir in butterscotch chips and pecans.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets on oven racks every seven minutes of baking time.
- Cool completely.
