Slow Cooker Chili with Black Beans and Corn is super fantastic. Now that cool weather has finally hit Texas, it’s time to pull out the chili recipes! Seasoned ground beef with black beans, corn, spaghetti sauce, Italian-style diced tomatoes, bell peppers, onions, Tabasco sauce and lots of spices make for one, tasty meal. Served with sour cream, cilantro and cheddar cheese, this chili is one of the best ever and such a delicious comfort food.

One of my friends recently had a granddaughter. A couple of weeks before the birth I volunteered to make a meal for them. She thought they would love that. As it happened, I had set out ground beef to make for something else, then when I didn’t use it up for that event, I needed to cook it before it went bad. I browned it and then refrigerated it before actually figuring out what I was going to make with it.
Once I starting looking through recipes on Pinterest, I came across this recipe along with Sweet Corn Muffins. I decided they would be perfect together. What I liked about this recipe is that after frying the ground beef, then everything can be thrown into the crockpot. It’s just too easy. I can do that. I was so busy making meals that week that it was nice having two recipes that turned out so easy to put together. I pulled out some Candy Corn Cupcakes from the freezer and their meal was complete.
I think you’ll love the taste of this chili. It’s got wonderful, savory flavors in the broth. Not to mention that all the veggies are tasty, too. I have to admit this is the first time I’ve ever made chili with anything other than kidney beans or pinto beans. I really liked the effect of black beans and corn. It was so scrumptious.

I served Slow Cooker Chili with Black Beans and Corn with Sweet Corn Muffins. Both were terrific.
This is a great entree for company! Everyone will rave over it.
Here’s what I did.
I used these ingredients plus vegetable broth. (You can also use beef broth).
Brown ground beef. Add salt, pepper and garlic powder. Stir to combine and place in crockpot that’s been sprayed with cooking spray.
I added all the remaining ingredients here except broth.
Stir ingredients to combine. I thought the mixture was a little too thick and needed some broth to thin it out a little bit.
Add vegetable or beef broth and cook on high for 4-5 hours.
After a few hours the flavors start mingling together and this turns into one sensational chili.
If you love chili, you will find this version delightful.
Serve Slow Cooker Chili with Black Beans and Corn garnished with cilantro and lime, or sour cream and cheddar cheese.
This would make a great recipe for any New Year’s, or New Year’s Eve parties. It tastes wonderful served with Sweet Corn Muffins.

SLOW COOKER CHILI WITH BLACK BEANS AND CORN

Slow Cooker Chili with Black Beans and Corn
Equipment
- 1 large skillet
- 1 hamburger chopper to cut meat down in small pieces while frying
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 crockpot
- 1 soup ladle
Ingredients
- 1 1/2-2 lbs. 93% lean ground beef or substitute ground turkey
- 1 tsp. garlic powder
- 2 tsp. salt divided use
- 1 tsp. ground black pepper
- 24 oz. Bertolli spaghetti sauce with olive oil and garlic
- 16 oz. vegetable or beef broth
- 2 15-oz. cans black beans drained well
- 1 15-oz. can whole kernel corn drained
- 1 15-oz. can Italian style diced tomatoes
- 1 tsp. minced garlic from a jar (or 6 cloves fresh garlic minced)
- 2 green bell peppers chopped
- 1 large onion chopped
- 2-4 tsp. chili powder depending on how spicy you desire
- 1 tsp. cumin
- 2 tsp. granulated sugar
- dash allspice
- dash cayenne pepper
- 1-2 drops hot sauce or Tabasco sauce
- sour cream, cheddar cheese, freshly squeezed lime juice, cilantro for garnish
Instructions
- Brown beef in skillet.
- Use a hamburger chopper to cut meat down in small pieces while frying..
- Add garlic powder, 1 tsp. salt and 1 tsp. pepper.
- Remove mixture to crockpot that's been sprayed with cooking spray.
- Add remaining ingredients.
- Cook on high for 4-5 hours or low for 7-8 hours until done.
- Ladle soup into bowls.
- Garnish with your favorite toppings.
