Soft Boiled Eggs are one of my favorite breakfast entrees. This super easy breakfast is made by soft-boiling eggs for exactly three minutes, then scooping out the egg and yolk (which will be partially runny) and stirring it into bread cubes. A little sprinkling with salt, pepper and parsley and that’s all there’s to it. It’s really very quick to prepare and tastes scrumptious. While I’ve cubed the bread for these pictures, we usually just tear bread into bite-sized pieces. Either way works fine.

I remember John used to make Soft Boiled Eggs for me when we were newlyweds (remember I couldn’t cook back then). He’s made this a lot over the years, especially whenever I’ve gotten sick. This was John’s go-to food for those occasions.
While I made this version with gluten free bread, we have had it with every kind of bread imaginable including raisin, sourdough, pumpernickel and plain white bread. While I’ve always kept this recipe simple with just salt, pepper and parsley, you can always add hot sauce or other seasonings and herbs if you prefer.

Soft Boiled Eggs is a scrumptious breakfast entree that’s so quick and easy to prepare. Everyone who samples this dish enjoys it because it’s so hearty, filling and satisfying.
If you’re not freaked out by partially cooked eggs, this recipe has great taste and texture. You can easily make this gluten free or even use Homemade Rolls or Bread that needs to be used up before going bad. We love this simple egg dish for breakfast and even make it when we want to serve breakfast for dinner. I hope you’ll enjoy it too.

My husband likes to make this recipe up for me when I’m “under the weather.”
I made Soft Boiled Eggs gluten free, but you can use any kind of bread you have on hand.
Here’s what I did.
I used these ingredients. If you don’t have gluten intolerance ANY kind of bread will work.
Bring water to a boil in a sauce pan. Add eggs. Boil exactly 3 minutes. Remove eggs from water.
Meanwhile, cube bread. Place in a breakfast bowl.
Remove egg from water and place on bread board. Tap egg very firmly with the side of the spoon in the middle of the egg.
Carry the egg with tongs into the bowl with bread cubes.
Open egg and allow egg yolk to drain into the bread cubes.
Scoop egg white and yolk out of the shells and place on top of bread cubes.
After scooping all the egg yolk and white out of the shell, sprinkle generously with salt, pepper and parsley.
Stir ingredients with a spoon to combine.
This is such a simple recipe yet it’s great on taste.

- 1 small sauce pan
- 1 sharp bread knife to cut bread into cubes
- measuring spoons
Ingredients
- 1 large egg
- 1 slice gluten free bread or wheat bread
- 1/4 tsp. salt and pepper to taste
- 1/8 tsp. dried parsley
Instructions
- Bring water in a small saucepan to a boil.
- Add egg and cook exactly 3 minutes.
- Meanwhile, either break bread into bite sized pieces or cut in small cubes.
- Place bread cubes in a bow.
- Remove egg and tap with the end of a spoon into the middle of the egg to break it.
- (Do this over top of the bowl with the bread).
- Once the egg breaks, scoop remaining egg yolk and white from both sides of the egg shell into the bowl with bread cubes.
- Sprinkle with salt, pepper and parsley to taste.
- Stir gently to combine.

Hi Teresa: Thanks for reminding me how comforting & delicious something so simple as a soft-boiled egg can be. I remember having one quite often for breakfast, when I was a little kid. I think I’ll have one (or two) for lunch today! (yum)
