Maple Bacon Sweet Potatoes

I found another grand slam recipe with Maple Bacon Sweet Potatoes! Anytime you can add bacon to a recipe it’s got to be good. The interesting combination was having cinnamon and maple syrup. Believe me, I’ve made sweet potatoes about every which way you can make them, but that combination had eluded me. I started salivating as soon as I saw the recipe. I am so glad I made it, because it was fantastic.

You all know how much I love sweet potatoes. I have a sweet potato recipe with bacon and peaches. One with pineapple. One with apples. I also have them as Sweet Potato Fries, fries with garlic butter and fries with Italian seasoning. I have them spicy, candied, parmesan, stuffed with bacon and cheese, in savory casseroles and sweet praline casseroles. Did I mention I have about ten soup recipes with sweet potatoes? I even have a cornbread and a biscuit recipe made with this glorious vegetable. One of my all time favorite pies is my Sweet Potato Pie. It’s the best ever. Yes, I love sweet potatoes.
So when I came across this recipe, I knew I needed to include it in my menu plan. I actually wanted to make it for our Friday night care group. But one of the gals who comes regularly hates cinnamon. So I held off. Then on a week when they were out of town I sprang it on the rest of the group. Yay. The sweet potatoes were gobbled down like there was no tomorrow. I got rave reviews over this delicious side dish.
I served these sweet potatoes with a Chicken and Dumpling Casserole, Sausage Cornbread and my favorite Greek Salad recipe. I made quite a large batch of these potatoes so I sent the leftovers to my neighbor and his family the next day. He recently had a kidney transplant (his wife was the donor) and I wanted to take them a meal. Along with Amish Chicken and Noodles, Winter Fruit Salad with Poppy Seed Dressing, Rapid Rise Italian Herb Bread and a Blueberry Cake, I included these potatoes and a fabulous homemade Pesto Potato Soup.
Maple Bacon Sweet Potatoes are the real deal. While I suppose these potatoes would be excellent for breakfast, I served them as a side at dinner. This four-ingredient recipe is really pretty easy. My potatoes took longer to cook than the original recipe, but still everything turned out wonderfully. This side dish is hearty, satisfying comfort food your family will love. If you enjoy bacon like I do, this side dish is a winner any time of the day.
Maple Bacon Sweet Potatoes are awesome!
These sweet potatoes are loaded with bacon, sprinkled with cinnamon and drizzled with maple syrup. Yum.
I served Maple Bacon Sweet Potatoes with Chicken and Dumpling Casserole, Best Ever Greek Salad and Sausage Cornbread.
Here’s what I did.
I used these ingredients. Salt and pepper is used only if you desire it.
Cut bacon into thin strips. Fry until crisp.
Remove to a paper towel-lined plate to drain. Do NOT drain grease in skillet.
Meanwhile, peel and cube sweet potatoes.
Add sweet potatoes to the grease in the skillet. (There’s a lot of grease! But this helps prevent the sweet potatoes from sticking to the pan).
Sprinkle with cinnamon and salt and pepper, if desired. Cover with lid and saute about 15-20 minutes until sweet potatoes are fork tender.
Add bacon and maple syrup.
Stir to combine and serve.
Maple Bacon Sweet Potatoes are absolutely mouthwatering.

MAPLE BACON SWEET POTATOES
(Recipe lightly adapted from Delicious Little Bites)
Maple Bacon Sweet Potatoes
Equipment
- 1 large skillet with lid or cast iron skillet with lid
- 1 sharp knife to cut vegetables
- 1 vegetable peeler
- measuring spoons
- 1 wooden spoon or spatula (or both)
Ingredients
- 4 medium-sized sweet potatoes peeled and diced evenly
- 1 lb. bacon diced into bite sized pieces
- 3/4 tsp. cinnamon
- 1 tsp. Salt and pepper to taste
- 2 tbsp. maple syrup
Instructions
- Heat a cast iron skillet over medium heat.
- Add the bacon and sauté until crisp.
- This will probably take 10-15 minutes.
- Meanwhile, peel and dice sweet potatoes.
- Set aside.
- Remove bacon to a paper towel-lined plate.
- Add sweet potatoes to bacon grease in skillet.
- Sprinkle with cinnamon, salt and pepper.
- Sauté 15-20 minutes with lid covered, or until tender.
- Add bacon back into skillet.
- Drizzle sweet potatoes with maple syrup.
- Stir to combine.

I like that this dish is just lightly seasoned. I’m definitely going to try it. Do you these potatoes could be frozen?
