Garlic Italian Sweet Potato Fries

Garlic Italian Sweet Potato Fries are awesome! Sometimes less is more, and sometimes MORE is MORE! In this case, MORE is certainly better! I decided to make oven baked sweet potatoes a couple of weeks ago but I used a LOT of Italian seasonings this time instead of just scant amounts. Wow, did this dish turn out wonderfully.

This vegan dish uses olive oil, minced garlic, basil, oregano, thyme, rosemary, and chives along with salt and pepper and it is such a tasty, savory way to use up sweet potatoes. For those of you growing sweet potatoes in your garden this is a great way to prepare them.
I love sweet potatoes served anytime of the day, and I eat them several times a week for either breakfast, lunch or dinner because they are so easy to prepare when you’re not making casseroles. Sweet potatoes are so healthy for you, too. According to Natural News, sweet potatoes have a low glycemic index which are helpful for diabetic patients; they have high potassium content which helps relieve muscle cramps (and is great for reducing blood pressure); and they also have a lot of retinol and retinoic acid which helps reduce the effects of skin aging.
Those who follow my blog know that I love savory ways to prepare sweet potatoes and this is another one. Sweet potatoes are great side dishes to serve with bacon and eggs for breakfast, or to serve with chicken, ham and pork. For that matter, I would serve sweet potatoes with fish or beef as well! But then again, I LOVE sweet potatoes. You’ve heard that refrain before! Anyway, if you’re looking for a tasty way to prepare sweet potatoes than take a peek at this simple and easy recipe. It’s gluten free, vegan, healthy, low calorie, economical, and delicious!
When I initially published this recipe in June 2013, I was still new at using my Canon camera. The pictures did not have enough contrast to suit me. Even though this recipe has been pinned lots of times, it still didn’t show as well as I would have liked. I recently remade this recipe (January 2017) and served it with steaks made with Gluten Free Steak Marinade. I had forgotten just how delicious this recipe was until having it again. I actually had it for lunch for a couple of days afterward which made my day! It’s such a fantastic recipe, I hope you’ll give Garlic Italian Sweet Potato Fries a try soon.
Garlic Italian Sweet Potato Fries are delicious. They’re probably my favorite way to eat sweet potatoes and that’s saying a lot!
Garlic Italian Sweet Potato Fries are delicately seasoned with garlic, parsley, oregano, chives, basil, thyme and rosemary. They taste incredibly good.
Each bite is mouthwatering! I served Garlic Italian Sweet Potatoes with Steaks made with Gluten Free Steak Marinade.
Here’s what I did.
I used these ingredients.
Peel sweet potatoes and cut them in long, thin wedges like French fries. Place sweet potatoes in a large 10×15″ glass baking dish that has been sprayed with cooking spray. (I actually used two separate dishes). Brush sweet potatoes with a couple of tablespoonfuls of olive oil. Sprinkle generously with salt and pepper.
Make garlic sauce for fries: Measure a third to a half of a cup of olive oil into a glass measuring cup. Add garlic, dried parsley, fresh chives, thyme, rosemary, basil, and oregano.
Brush garlic Italian mixture onto sweet potatoes. Cover with foil.
Bake at 400 for about 30 minutes. Remove foil and turn potatoes over. Bake another 5-10 minutes uncovered until sweet potatoes are fork tender.
Serve as a side with beef, ham, pork, chicken or any meat entree. I also like this served as a side to bacon and eggs for breakfast!
This close up view shows the texture of the sweet potatoes with all their seasonings adhering to them. Garlic Italian Sweet Potato Fries have such wonderful flavors. More was really better in this case!

GARLIC ITALIAN SWEET POTATO FRIES
(my own concoction)
Garlic Italian Sweet Potato Fries
Equipment
- 1 10x15" glass baking dish (I actually used two dishes so the potatoes would be in a single layer; a large cookie sheet will also work)
- 1 sharp knife to cut herbs
- measuring cups
- measuring spoons
- 1 pastry brush
- 1 spatula
Ingredients
- 2 large sweet potatoes peeled (or four small sweet potatoes)
- 2-3 tbsp. olive oil
- 1/3 cup olive oil
- Salt and pepper to taste
- 2 large cloves garlic minced
- 1 heaping tablespoon dried parsley
- 1/4 cup fresh chives diced
- 1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1 heaping tablespoon dried basil
- 1/2 tsp. dried oregano
Instructions
- Peel sweet potatoes and slice down into thin French fry-type wedges.
- Place in a 10x15” glass baking dish that has been sprayed with cooking spray.
- Brush with 2-3 tbsp. olive oil and sprinkle generously with salt and pepper.
- Measure 1/3 cup olive oil into a glass measuring cup.
