New England Butternut Squash is sensational. Really. This delicious five-ingredient recipe will knock your socks off! It’s also a terrific way to use up butternut squash. I made this for a company dinner, but it’s so easy you can make this side dish up anytime for regular family dinners.

One of our neighbors underwent surgery during April. The following week her husband also had to have surgery. I offered to bring her a meal. When she told me they were going to keep her overnight, I threw together another quick meal and provided food for her (or her family) for two days. I whipped up my easy Cavatini dish, Rapid Rise Italian Herb Bread, fruit and Raspberry Swirl Bars for the first night. Everything was pretty simple, plus I pulled the dessert out of the freezer. 🙂
The night she was home, I made up a simple Garlic Parmesan Chicken, Herb Roasted Vegetables and a Reese’s Peanut Butter Cup Chocolate Pie to die for. They loved the meal. They loved both meals! Actually both of those meals were really easy. The prep time was minimal for each recipe, so it worked out well for me as well as for them.
My husband and I were out walking our neighborhood late one night and ran into her and her next door neighbor (who we know well because they go to the same church). When I offered to bring an meal, I could tell she didn’t want to put us to the trouble. The friend we know jumped in and said, “You better take the meal. She’s a wonderful cook!” Anyway, they were really happy to have food provided to them during their recovery time.
If you enjoy butternut squash, this is a terrific way to serve it. The squash is seasoned with cinnamon, nutmeg and maple syrup so it’s flavored wonderfully. It pairs well with just about any kind of entree. Plus, it’s a great way to use up butternut squash. Nowadays, you can find butternut squash in the grocery stores all year round, not just in the fall. It’s marvelous in soups, but it’s equally delightful in pasta or served as a side dish. I’ve also served it as an appetizer in nachos!

This 5-ingredient recipe is so easy to make.
This is a delightful way to use up butternut squash.
New England Butternut Squash is seasoned with cinnamon, nutmeg and maple syrup. It’s absolutely scrumptious.
Here’s what I did.
I used these ingredients.
Bake a butternut squash in the oven. I baked mine about an hour at 400 degrees.
Cut the squash in half lengthwise. Remove the pulp and seeds.
Remove the peels from both halves.
Place the roasted squash in a mixing bowl.
Mash butternut squash with a potato masher.
Add butter, cinnamon, nutmeg, and maple syrup.
Stir ingredients to combine.
Spray an 8×12″ baking dish with cooking spray. Pile mashed butternut squash into the prepared baking dish and smooth the top. You can also use a round cake pan, 9×9″ square pan or a two-quart casserole dish.
Because I allowed the butternut squash to cool completely, I reheated the squash at 350 for about 20 minutes. If the squash is still hot, you can eliminate this step.
I served New England Butternut Squash with Garlic Parmesan Chicken and Grilled Herb Vegetables.
This excellent side dish is gluten free. You can make it vegan by substituting avocado oil or coconut oil for the butter in the recipe.
This is a wonderful side dish for holiday or company dinners.

NEW ENGLAND BUTTERNUT SQUASH
(Recipe adapted from Taste of Home, Quick Cooking, 2008)
New England Butternut Squash
Equipment
- 1 roaster pan for the butternut squash
- 1 sharp knife to cut squash in half
- 1 large mixing bowl
- 1 potato masher
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 8x12" glass baking dish or 2-quart serving dish, as desired
Ingredients
- 1 large butternut squash
- 1/4 cup unsalted butter melted
- 1/4 cup real maple syrup (NOT corn syrup)
- 3/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
Instructions
- Bake squash at 400° for 45-60 minutes or until squash is tender.
- Cut squash in half lengthwise.
- Discard seeds and pulp.
- Remove peel and place butternut squash in a mixing bowl.
- Mash butternut squash with a potato masher.
- Stir in butter, maple syrup, cinnamon and nutmeg.
- Transfer butternut squash to an 8x12" glass baking dish or serving dish, as desired.
- Sprinkle additional cinnamon on top of individual servings, if desired.
