Cheesy Broccoli, Cauliflower and Carrot Casserole
Cheesy Broccoli, Cauliflower and Carrot Casserole is utterly scrumptious. No kidding. This tasty side dish is so wonderful everyone will be coming back for seconds. I used two packages of frozen broccoli, cauliflower and carrots. I added celery, onion, sour cream and Cheddar cheese to give it body and flavor. Then I topped it with a combination of melted butter, Ritz cracker crumbs and more Cheddar cheese. It was sensational to say the least.

Back in mid November, our Wednesday night community group got together for an early “Thanksgiving” dinner one evening. John made his specialty: Apricot Glazed Ham. I added my favorite: Pineapple Casserole and this Cheesy Broccoli, Cauliflower and Carrot Casserole. Others brought salads, other side dishes and desserts. It was a fabulous meal where no one went away hungry!
Cheesy Broccoli, Cauliflower and Carrot Casserole was really ooohed and aawwwed over. Seriously. Who would think that a side dish would get rave reviews? But this tasty side did just that. I’ve actually made this basic recipe several times with different vegetables and each time everyone goes back for seconds.
If you need a side dish for Easter, Mother’s Day or Father’s Day dinners or any company dinner, this wonderful side dish will make everyone happy. It’s a great way to get your kids to enjoy vegetables too.

Broccoli, Cauliflower and Carrots is an unbeatable vegetable combination, in my opinion.
We served it with Apricot Glazed Ham and Pineapple Casserole.
Here’s what I did.
I used these ingredients.
Microwave each package of frozen broccoli, cauliflower and carrots about five minutes. Place in a large mixing bowl.
Add diced celery, diced onion, shredded Cheddar cheese, sour cream and salt and pepper.
Stir ingredients well to combine..
Spoon vegetable mixture into a greased 2-quart baking dish.
Combine melted butter, Ritz cracker crumbs and remaining Cheddar Cheese.
Sprinkle Ritz Cracker crumb topping evenly over top of casserole.
Bake casserole at 300 degrees for 30-40 minutes until the casserole starts bubbling on the sides and crumbs become golden brown.
Serve! We enjoyed this tasty casserole with Apricot Glazed Ham and Pineapple Casserole. Yum!

CHEESY BROCCOLI, CAULIFLOWER AND CARROT CASSEROLE
(My own concoction)
Cheesy Broccoli, Cauliflower and Carrot Casserole
Equipment
- 1 two-quart casserole baking dish
- 1 mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- Rolling Pin to crush the Ritz crackers (or crush in your hands)
- 1 sharp knife to cut vegetables
- 1 small bowl
- 1 fork
Ingredients
- 24 oz. bag frozen broccoli, cauliflower and carrots thawed (two 12-ounce bags)
- 1 cup celery chopped
- 1/3 cup onion chopped
- 1 cup sour cream
- 1 cup sharp Cheddar cheese divided use
- 1/4 tsp. sea salt
- 1/8 tsp. ground black pepper to taste
- 2 cup crushed Ritz crackers (measure after crushing)
- 1/2 cup salted butter melted (1 stick)
Instructions
- Microwave each bag of vegetables about 5 minutes on high.
- In a large mixing bowl, combine mixed vegetables with celery, onion, sour cream, 1/2 cup of cheddar cheese and salt and pepper to taste.
- Pour mixture into greased 2 qt. casserole dish.
- Combine melted butter, Ritz cracker crumbs and 1/2 cup Cheddar cheese in a small bowl with a fork.
- Sprinkle crumb mixture evenly on top of vegetable layer.
- Bake at 300 degrees for 30-40 minutes.

Does anyone think this would taste good without onions? My family hates them. Even if they are in tiny chunks.

If you don’t like onions, I’d just leave them off. If you want a little more flavor, you might try adding leeks.
