Easy Crockpot Tomato Soup is one of my favorite ways to enjoy Tomato Soup! This scrumptious Tomato Soup recipe is excellent comfort food. It's smooth, creamy, and savory with the perfect blend of everything.Tossing everything in the slow cooker makes it so quick and easy too. Adding croutons to serve it makes it even more tasty. Gluten free and vegan.
1leekgreen top removed, washed thoroughly and sliced
2clovesgarlicminced
2ribscelerydiced
2carrotspeeled and sliced
1tsp.dried basil
1tsp.dried oregano
1tsp.dried thyme
1tbsp.dried parsley
1tsp.sea salt
1/2tsp. ground black pepper(I actually used one teaspoon)
1cuphomemade croutonsfor garnish, if desired
1/2cupparmesan cheese shavingsfor garnish, if desired
Instructions
Place tomatoes, juice, onion, celery, garlic, bell pepper, leek and carrots in a crockpot.
Add vegetable broth.
Add seasonings and cook on high about 3 to 3 ½ hours.
Check seasonings; add more, if desired.
Puree ingredients with an immersion blender until smooth.
If you want a thinner soup add additional vegetable broth at this time and stir into hot soup.
Ladle soup into bowls and garnish with homemade croutons and parmesan cheese shavings, if desired.
Notes
NOTE: If you want a thinner soup, you can add up to 16-oz. of additional vegetable broth but I would not add this until after the mixture is pureed, so the soup is not thinned prematurely.NOTE: You can substitute chicken broth for the vegetable broth if you don’t need to keep the recipe vegan. Low-sodium tomato juice can be used as a last resort, but you will definitely have to dilute the soup with additional vegetable or chicken broth or the soup may end up tasting too much like tomato sauce.NOTE: If trying to keep the soup gluten free and vegan, eliminate parmesan cheese as a garnish, and use a gluten free/vegan bread to make homemade croutons.
