Rocky Road S’Mores Bars
Rocky Road S’Mores Bars are awesome. This delicious brownie rocks! It is one of our favorite brownie recipes and certainly the most requested. It has a delicious graham cracker crust. Then it’s layered with marshmallows, chocolate chips and either pecans or walnuts.

It just oozes a wonderful, decadent, chocolate s’mores taste that everyone loves. The nice thing about Rocky Road S’Mores Bars is they are so easy to make. From the very beginning I’ve always made a double batch of this recipe to fit a 9×13″ or 10×15″ dish. I knew a 9×9″ baking dish would never be enough of this great dessert to satisfy my family!
We have used this recipe almost every year for our annual cookie baking extravaganza. Everyone wants more! I’m sure you will too. I’m almost positive I got the original recipe off the back of a Nestle chocolate chip package back in the late 70s or 80s.
It is possible that the recipe came from Hershey’s chocolate chips but I searched their archives and couldn’t find a Rocky Road S’Mores Bar recipe there either. They have some recipes that are close but use different ingredients.
Regardless, if you’re looking for a fantastic S’Mores recipe, then Rocky Road S’Mores Bars is it! You will get your chocolate fix in one bite! Plus they’ll satisfy any sweet tooth craving you have. Give these delicious brownies a try and see if your family doesn’t rave over them like ours does.
When I initially posted this recipe in August 2012 my pictures were not the greatest. I crowded most of the bars so it was hard to distinguish them from one another. I was also using an iPhone 3 rather than the Canon I purchased about 7 months later.
This is such a phenomenal recipe that I wanted to make it again and take a few new pictures. That way you would be able to see these delicious jewels. I remade these bars (February 2015) for some friends who were relocating to our area as part of a meal I took them. I do make one recommendation and that is that you refrigerate the bars before cutting, otherwise they are extremely gooey and messy.

Rocky Road S’Mores Bars are one of the most fabulous brownie/bars you will ever taste!
This dessert is loaded with chocolate chips, marshmallows and walnuts.
This is a chocolaty treat your whole family will enjoy.
Here’s what I did.
I used these ingredients.
Mix softened or melted butter and brown sugar with a whisk. I doubled all the ingredients so I could put them in a 9×13″ pan. Original recipe is for a 9×9″ pan.
Cream until smooth.
Add graham cracker crumbs and UNBLEACHED all-purpose flour. Bleached flour toughens baked goods.
Stir ingredients with a wooden spoon to combine well.
Spread graham cracker mixture onto bottom of a greased 9×13″ baking dish. I usually end up patting this down firmly with my hands so that the crumbs adhere to each other better after baking and don’t crumble apart.
Spread the marshmallows on top of graham cracker crust. It is imperative that the marshmallows be spread first rather than the nuts or chips or you will have a burned mess!
Next add the chocolate chips over top of the marshmallows, followed by the pecans or walnuts.
Bake 20-25 minutes at 350. Remove from oven.
You don’t want the marshmallows to get too brown. These are very lightly browned and starting to puff out. A few more minutes and they would have been overcooked. The easiest way to cut these bars is to put them in the freezer for an hour or refrigerate for several hours or overnight. Not nearly as messy that way.

ROCKY ROAD S’MORES BARS
(Recipe adapted from the back of a Nestle chocolate chip package)
Rocky Road S'Mores Bars
Equipment
- 1 9x9" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 spatula
- 1 nut chopper if nuts are not previously chopped
- measuring cups
- measuring spoons
- 1 electric mixer
Ingredients
- 1/2 cup unsalted butter
- 3/4 cup UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1/2 cup brown sugar
- 1/2 cup graham cracker crumbs
- 1/2 cup chopped walnuts or pecans
- 6 oz. chocolate chips 1 cup
- 2 cups miniature marshmallows
Instructions
- Beat butter and brown sugar with an electric mixer until light and fluffy.
- Add combined flour and crumbs; mix well.
- Press onto bottom of greased 9” square pan.
- Sprinkle marshmallows, then chocolate chips, and finally walnuts over top.
- Bake at 350° for 15-20 minutes or until golden brown.
- Cool; Cut into bars.

Sorry, another question, my boyfriend is not into REALLY sweet, would it be possible to substitute semi-sweet chocolate chips or will that throw the whole recipe off?

Hello! I am looking for something to bake for my marshmellow loving boyfriend and these look grand! Quick question, will I be able to use cookie cutters on these?

I think it would be difficult. I usually cut with a knife. The cookie cutter would have to be a really strong metal with a sharp edge to cut through the crust.
