Spicy Honey-Brushed Chicken Thighs

Spicy Honey-Brushed Chicken Thighs are utterly amazing. I loved them. Last summer I saw pictures of Spicy Honey Chicken Thighs in my WordPress reader. I knew immediately that I wanted to make that delicious looking chicken recipe.

It has been about 9 months now and I finally got around to making it a couple of weeks ago. It tastes even better than it looks! I loved the tastes of the seasoning and sauce for this recipe. I found a large package of 13 boneless chicken thighs at the grocery store a couple of weeks ago on close out for $2.14. Well, I couldn’t pass it up. I remembered this recipe calls for thighs, although boneless chicken breasts, turkey filets, or even bone-in chicken pieces would work excellently with this recipe.
The seasonings in this recipe are not barbecued in flavor–rather there is cumin, chili powder, paprika, cayenne pepper, and garlic along with the sweetness of honey and some apple cider vinegar which tempers the hot spicy flavor. I had to actually use two batches of the coating in order to have enough to coat the 13 chicken thighs I was cooking.
This recipe turned out wonderfully and I would make it again in a heartbeat. It took only about 5 minutes to season the food and then stash the pan into the oven to bake. I made one major change to the recipe. Instead of broiling the chicken after brushing with the glaze of honey and apple cider vinegar I just baked it and basted the chicken a few times. I did not want the chicken to turn black. I really liked the result.
This quick and easy recipe is great if you’re preparing other casseroles, salad, or dessert for a meal because it takes so little time so you can concentrate on other parts of your menu. The last few minutes of baking you baste the chicken with the honey-apple cider vinegar mixture and that’s it. Quick, easy, economical, tasty. Can’t ask for much more than that in a recipe!

If you like a little heat in your food consider making this great recipe today! Or if you prefer your food not so spicy simply decrease the amount of cayenne pepper a little. Personally speaking, I find the recipe perfect the way it is! This reheats wonderfully in the oven or toaster oven, too.
When I originally posted this recipe in June 2013, the pictures were not exactly what I wanted, so when I knew I was having a houseful of company last weekend (January 2015), I thought this would be a great item to add to my finger food menu, and get some new pictures while I was at it.
I used one batch of seasoning for 8 chicken thighs. It was just enough. This recipe works great for tailgating, but you can also serve the chicken with rice or with other veggies and sides as a main dish entree. The flavor is so wonderful, I hope you give it a try.
The honey-apple cider glaze used in Spicy Honey-Brushed Chicken Thighs really enhanced the flavors of this lovely recipe.
Spicy Honey-Brushed Chicken Thighs is a wonderful sweet and spicy recipe.
Instead of broiling the chicken I basted it with the honey-apple cider mixture and continued baking it a few minutes on each side–this prevented the chicken from becoming too blackened.
Here’s what I did.
I used these ingredients.
Place spices in a mixing bowl.
Stir ingredients well to combine. Pour mixture into a zip lock bag.
Add chicken to zip lock bag and shake (with zipper fastened) until all the pieces are well coated.
Place chicken thighs in a greased 9×13″ glass baking dish.
For the glaze: place apple cider vinegar in a small bowl. Add honey. Stir well until combined. Set aside until chicken is ready to baste.
After chicken has baked about 30-45 minutes, (depending on how many pieces and what size), brush the tops of the chicken with honey sauce. Return to oven. Remove chicken from oven. Turn pieces over with a fork. Brush remaining sides of chicken thighs with honey mixture. Return to oven and bake 5 minutes more.
Now Spicy Honey-Brushed Chicken Thighs are ready to serve!

SPICY HONEY-BRUSHED CHICKEN THIGHS

Equipment
- 1 10x15" glass baking dish or roaster pan
- 1 pastry brush
- 1 zip lock bag
- 1 wooden spoon
- 1 small bowl
Ingredients
- 2 tsp. garlic powder
- 2 tsp. chili powder
- 1/2 tsp. salt
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/4 tsp. cayenne pepper optional
- 2 lbs. chicken thighs 8 skinless, boneless, or 6 regular chicken thighs
- 6 tbsp. honey
- 2 tsp. cider vinegar
Instructions
- Preheat oven to 350°.
- Combine the garlic powder, chili powder, salt, cumin, paprika, and cayenne pepper in a large ziplock bag.
- Add chicken to bag, seal and shake, coating the pieces of chicken.
- Place chicken in a glass baking dish sprayed with cooking spray and bake for about 30 minutes or until internal temperature reaches 180 degrees.
- (Mine took about 45 minutes).
- While the chicken is baking, combine the honey and vinegar in a small bowl, stirring well.
- When the chicken is cooked through, remove from oven.
- Brush chicken pieces with the honey mixture.
- Bake an additional 5 minutes, baste chicken, turn pieces over and bake an additional 5 minutes or until chicken is crisp.
