Parmesan Beets with Thyme
Parmesan Beets with Thyme is a delightful recipe. Especially, if you enjoy beets, you’re going to love this recipe. Beets are sprinkled with seasonings like thyme, parsley, lemon pepper and parmesan cheese and then baked up to perfection.

They’re crispy, crunchy and oh, so, delicious if you’re a beet lover. I also used a little bit of fresh lemon thyme that I had growing in my large flower pots on our back porch. That was an utterly wonderful addition. Yes, I am trying to find creative ways to use this healthy vegetable!
I have also used golden golden beets in this recipe and they don’t bleed all over everything like regular beets do. Regardless, either type of beet that you can find turns out quite tantalizing in this easy and simple recipe. Additionally, the taste of the two different beets is very similar, though golden beets may not be quite as strong as regular beets.
Parmesan Beets with Thyme is a tasty, low-calorie, and easy way to prepare beets. Because there’s no oil involved (other than the cooking spray to make sure they don’t stick to the pan) they’re a lower calorie option than many fried veggies.
Parmesan Beets with Thyme is an extremely easy 5-ingredient recipe that’s simple enough for kids to whip up and makes a quick side dish if you have beets on hand you are trying to use up. This is an all natural gluten free recipe. While I used parmesan cheese from a can, I’ve also used it with regular freshly grated parmesan cheese and both work well. In fact Parmesan cheese is a great topping for almost any veggie like potatoes or asparagus.
If you enjoy beets, I recommend this as a different option for the regular Sweet and Sour Beets you’ve probably had for Thanksgiving and other holidays. While both are delicious, this one eliminates sugar and is lower calorie. So if you’ve got beets in your garden you are trying to use up (or you just love beets!) this recipe may work for you.
When I initially posted this recipe in August 2012 it was still very early in my food blogging days. My pictures were less than desirable and certainly not as crisp and clear as I would have liked since they were taken with an iPhone 3 camera.
I recently remade this recipe (July 2016). This time I used regular beets instead of golden beets and I used a Briefton’s 5-blade spiralizer to cut the beets. Hard veggies like beets and carrots don’t work well in those small hand-held veggie spiralizers so I used my big model.
Spiralizing the beets makes them like long noodles which I really enjoy for a change of pace for this healthy veggie. If you’re looking for a savory beets recipe to use up garden produce or to tempt finicky appetites, give Parmesan Beets with Thyme a try soon!

Swirl the beets onto your fork just like when eating pasta!
Here’s what I did.
I used these ingredients. I also used fresh lemon thyme for garnish. You can also use freshly grated parmesan cheese, if you desire. The mason jar contains pink Himalayan sea salt.
Peel beets. Place on spiralizer blade. I used a thin blade.
Turn the wheel and the blade will spiralize the beets into long strings.
When you’re done you will be left with the spiralized beets plus the cores which look like mushrooms.
Spray an 8×12″ glass baking dish with cooking spray. Sprinkle parsley, thyme and lemon pepper over top.
Sprinkle with parmesan cheese.
Bake at 350 about 20-30 minutes until beets are fork tender. This is very tasty combination of herbs.
Sprinkle with additional parmesan cheese and bake an additional 5 minutes.

Serve beets with your favorite main dish.
Parmesan cheese and thyme really add a lot of flavor and dress up beets so they are amazingly delicious.

Parmesan Beets with Thyme
Equipment
- 1 spiralizer
- 1 7x9" baking dish
- 1 vegetable peeler
- measuring cups
- measuring spoons
- 1 sharp knife to cut the ends off the beets
Ingredients
- 3 small beets peeled
- 1/4 to 1/3 cup Parmesan cheese grated, from a can
- 1/4 to 1/2 tsp. lemon pepper
- 1/4 to 1/2 tsp. dried thyme
- 1/4 to 1/2 tsp. dried parsley
- 1/4 to 1/2 tsp. pink Himalayan sea salt
- 1 tbsp. avocado oil or olive oil
- coconut oil cooking spray
Instructions
- Preheat oven to 350°.
- Peel beets.
- Put beets through a spiralizer with a thin blade.
- Set aside.
- Spray a 7x9” glass baking dish with cooking spray.
- Spread beets into prepared dish.
- Sprinkle with lemon pepper, thyme, parsley and salt.
- Sprinkle about 2 tbsp. Parmesan cheese over top.
- Bake for about 20-30 minutes or until lightly browned and beets are fork tender.
- Sprinkle remaining parmesan cheese over top and bake again for about 5 minutes.
- Drizzle with avocado or olive oil before serving.
