These fantastic cookies are a great way to get your chocolate fix with lots of chocolatey Red Velvet taste from a box cake mix, rolled in sugar and then pressed with a Hershey’s Kiss in the center during baking. Voila. Perfect! These scrumptious cookies are so easy too. You only use 6 ingredients! You can have a batch of these cookies ready to eat in no time!
For those of you looking for healthy and gluten free, sorry, but this recipe doesn’t qualify! It is a wonderful cookie though, great for holiday baking or Valentine’s Day–sure to tempt your sweetheart! I’ve been wanting to use up some Hershey’s Kisses we purchased during the holidays and thought I would try my hand at pressing them into a Red Velvet cookie dough. I happened to look on the cake mix box and decided to look at the Duncan Hines website. This cookie is inspired from their Red Velvet Sandwich Cookie. I changed it up a little bit, added the Hershey’s Kisses so they would be similar to my Peanut Blossoms recipe, and here they are. Fabulous, rich, delicious, and delightful!

If you’re looking for a super easy cookie that you can whip up in no time and has fantastic flavor this amazing cookie is the one for you! And, after all, who can resist Hershey’s Kisses?

Here’s what I did.
You will need a box of Red Velvet cake mix.
Red Velvet box cake mix is very lumpy and crumbly. I find it is easier to use this mix if I press out all the lumps first. I used a potato masher.
Here you can see that the cake mix is smooth after I pressed it with a potato masher. Add an egg.
Add vanilla.
Add melted butter.
Add to mixture.
Stir all the ingredients together and combine well with a wooden spoon. Refrigerate dough for an hour.
Roll dough into small balls and place in a bowl of sugar.
Roll dough into granulated sugar and coat well. Place cookies on cookie sheets that have been sprayed with cooking spray. I didn’t have time to place the cookie dough in the refrigerator for an hour so I put the cookie sheet in the freezer for about 15 minutes. I wanted to make sure the cookies did not spread too much during baking.
While the cookie dough is being refrigerated remove the wrappers from the Hershey’s Kisses and set aside.
Place cookies on cookie sheet that has been sprayed with cooking spray. Then place cookie sheet in oven and bake at 350 for about 8 minutes.
Remove from oven and bake an addition 5-6 minutes. You want the chocolate kisses to start to soften but not overbake the cookie!

RED VELVET KISSES
(Recipe inspired from Duncan Hines)
1 box Red Velvet cake mix
1 egg
1 tsp. vanilla
1 stick butter, melted
granulated sugar
2 ½ dozen Hershey’s Kisses, unwrapped
Mash cake mix in large mixing bowl to get out all the lumps. Add egg, vanilla, and melted butter. Stir well to combine. Refrigerate dough for 1 hour. Meanwhile, unwrap Hershey’s Kisses. Set aside. Remove refrigerated dough from refrigerator. Place about ½ cup sugar in small bowl. Roll cookie dough into small balls. Roll cookie dough into sugar to coat well. Place on cookie sheets that have been well sprayed with cooking spray. Bake about 8 minutes at 350°. Place Hershey’s Kiss in center of cookie and press down. Bake another 5-6 minutes or until done. Let cool in pan about 5 minutes before removing to wire racks. Makes a little over 2 dozen cookies.

They were extremely easy to make. I didn’t have time to wait an hour for the dough to cool in the refrigerator, so I put the cookie sheet of dough balls in the freezer for 15 minutes. I did this so the cookies would hold their shape and not spread out and flatten too much when baking. I thought they turned out wonderfully.
They absolutely did! I might make them for my 30+ friends this week. I don’t think they’ll last very long haha!
