Balsamic Yellow Squash Bake

Balsamic Yellow Squash Bake is an absolutely delightful recipe! If you’re a yellow squash lover you will love this tasty side dish. Yellow squash, leeks, red onions, red bell peppers and garlic are seasoned with fresh parsley, basil and thyme. Then the dish is sprinkled with salt and pepper, balsamic vinegar and olive oil before baking. Wow! The flavors are simply sensational.

I had a bunch of yellow squash in the refrigerator that I needed to use up and concocted this delicious casserole on the fly one night for dinner. The balsamic vinegar and olive oil absolutely make this dish. I’ve had balsamic vinegar in salads before, but never over cooked veggies. It was terrific.
If you’re looking for a great recipe to use up yellow squash, then give this savory recipe a try. You won’t be disappointed. Balsamic Yellow Squash Bake is healthy, low calorie, gluten free and vegan. It also tastes superbly. I highly recommend it for Thanksgiving, Christmas or other holiday dinners when you want lighter fare. It’s nice to have something light in addition to all the other heavy casseroles you’re making. It’s also the perfect side dish for any kind of entree.
I initially posted this recipe in December 2013. I realized when I was going back through the recipe that the pictures were of very poor quality. I recently remade the recipe (March 2019) to take a few new pictures. I served it with Baked Chicken Bruschetta, Seasoned Mashed Potatoes and Raisin Spice Bars. It really is a wonderful accompaniment for almost any main dish entree.
Balsamic Yellow Squash Bake is a delicious side dish.
The flavors of this casserole are really wonderful.
Balsamic vinegar and olive oil add wonderful savory depth to the veggies.
Here’s what I did.
I used these ingredients.
Slice yellow squash and layer in a 9×13″ glass baking dish that has been sprayed with cooking spray.
Add sliced leek, diced red onion and diced red bell pepper.
Add minced garlic, fresh basil, fresh parsley, fresh thyme, salt and pepper.
Drizzle olive oil over top of the veggies.
Drizzle with balsamic vinegar.
Cover casserole with foil.
Bake at 350 for about 30-40 minutes.
Balsamic Yellow Squash Bake is a terrific accompaniment for any main dish entree.
I served this side dish with Baked Chicken Bruschetta and Seasoned Mashed Potatoes.
This delicious casserole is both gluten free and vegan.

Balsamic Yellow Squash Bake
Equipment
- 1 9x13" glass baking dish
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
- aluminum foil
Ingredients
- 5 medium yellow squash sliced
- 1 leek green top removed, thoroughly washed and sliced
- 1/3 cup red onion diced
- 1/2 red bell pepper diced
- 2 cloves garlic finely minced
- 1/4 cup fresh parsley minced
- 1 heaping tablespoon fresh chopped basil
- 1 heaping tablespoon fresh thyme
- 1/4 to 1/3 cup olive oil
- 1-2 tbsp. balsamic vinegar
- 1 tsp. Salt and pepper to taste
Instructions
- Spray a 9x13” glass baking dish with cooking spray.
- Layer ingredients in dish in order listed.
- Cover with foil and bake at 350 about 30-40 minutes or until cooked through.

- ¼ cup fresh torn parsley
- 1 heaping tablespoon fresh chopped basil
- 1 heaping tablespoon fresh thyme
- ¼ to 1/3 cup olive oil
- 1-2 tbsp. Pompeian balsamic vinegar
- salt and pepper, to taste
- Spray an 8×12” glass baking dish with cooking spray.
- Layer ingredients in dish in order listed.
- Cover with foil and bake at 350 about 30-40 minutes or until cooked through.
Onion, leeks, garlic, and bell peppers enhance the flavors of yellow squash in this terrific side dish. This is a great way to use up garden squash or excess veggies from your CSA!
Balsamic Yellow Squash Bake is a very healthy side dish along with being extremely low calorie.
Balsamic Yellow Squash Bake is also a great casserole to make for holidays like Easter or Mother’s Day. It’s fantastic with Baked Chicken Bruschetta and Seasoned Mashed Potatoes.
