I love this simple, appetizing dish of Fried Sweet Potatoes! This is a yummy breakfast idea as it makes an especially nice side dish and a great alternative to hash browns when you want to prepare a large country-style breakfast. It’s so quick and easy and very tasty, not to mention filling. I make Fried Sweet Potatoes up for any meal of the day or as a side dish because I never get tired of eating sweet potatoes. Sweet Potatoes are also delectable when paired with apples, peaches or pineapple.

I do get tired of eating the same breakfast foods all the time, and you can only go so far with 101 ways to bake oatmeal or 50 new ways to make frittatas for breakfast and that kind of fare. This recipe gives you a healthy alternative to granolas which are usually packed with MSG, fillers and sugars, or to eating Candied Sweet Potatoes and always having to eat sweet potatoes sweet. Fried Sweet Potatoes are healthy, clean-eating, low calorie, gluten free and vegan. I used avocado oil to fry the potatoes and veggies in and it is a delight to cook with.
When I initially posted this recipe in May 2013, I had just begun trying out my new Canon camera, but I used my iPhone for this one because I whipped it up on the fly. The pictures were not very well presented and a little on the dark and blurry side, too.
I’ve been going back through all my first year blog recipes and remaking the recipes so I can offer more delightful and appetizing pictures and this particular recipe came up for remake in February 2016. I still never tire of eating Fried Sweet Potatoes. This time I included all the seasonings I suggested the first go around. The savory flavors make this dish quite special and a real treat. Here’s what I did.
I used these ingredients. You can also use butter, olive oil or coconut oil to fry the potatoes in.
Place a couple of tablespoons of avocado oil in a skillet. (Cast iron skillets also work great). Add small, peeled, cubed sweet potatoes.
Add onion slices that have been separated into rings. This gives a nice texture to the dish. Add diced red and yellow bell pepper. You can also use green but I would avoid orange bell pepper because it doesn’t contrast with the sweet potatoes enough.
Sprinkle with salt, pepper, Italian seasoning and parsley to taste. Stir to combine and cover with a lid. Turn potatoes over with a spatula every five minutes to prevent sticking. Cook over low to medium heat for about 30-40 minutes or until sweet potatoes are fork tender.
Garnish Fried Sweet Potatoes with fresh thyme if desired.
Preparing sweet potatoes as a savory side dish instead of sugary is really a treat.
Serve for breakfast, lunch, or dinner!

Fried Sweet Potatoes
Equipment
- 1 large skillet
- 1 spatula
- measuring cups
- measuring spoons
- 1 sharp knife to cut vegetables
Ingredients
- 2 large sweet potatoes peeled
- 1 large onion sliced and separated into rings
- 1/2 cup red bell pepper diced
- 1/2 cup yellow bell pepper diced
- 1/2 tsp. sea salt or to taste
- 1/4 tsp. pepper or to taste
- 1 tsp. dried parsley
- 1 tsp. Italian seasoning
- 2 tbsp. avocado oil olive oil
Instructions
- Melt oil in a skillet or cast iron skillet over low heat.
- Add potatoes, onions, and bell pepper.
- Season with salt, pepper, Italian seasoning and parsley.
- Stir to combine.
- Cover with lid and cook over low heat about 30-40 minutes until sweet potatoes are fork tender.
- Turn potatoes over with large spatula EVERY five minutes to prevent them from sticking to the pan.
