Crockpot Gluten Free Turkey Noodle Soup is one of my favorite ways to use up leftover turkey. (Or chicken for that matter). I cooked off our turkey carcass after Thanksgiving so I had a couple of gallons of broth along with a lot of turkey I wanted to use up. I ended up making four different soups with our leftovers from Thanksgiving, including Turkey Corn Chowder, Turkey Vegetable Soup and this delightful recipe. I added some vegetables and Ronzoni’s new gluten free spaghetti noodles.

I’ve tried a LOT of gluten free products over the past three years and this is by far the best noodle version I’ve had. Many of them are so starchy that they cook up with a lot of sludge when you boil the noodles. Plus they just don’t taste all that great. But these noodles are so much better tasting that even my husband doesn’t realize he’s eating gluten free when I make them. (Usually he will avoid any kind of GF pasta because he doesn’t like the taste).

Ronzoni uses a mixture of rice, quinoa and corn. If you use only corn flour, the noodles are sticky and tough. If you use only rice flour the noodles are starchy and just don’t taste all that great. So now any time I want to use a noodle in a recipe, I usually try to find one that Ronzoni makes. I made a Gluten Free Macaroni and Cheese with their noodles about a month ago and they turned out terrific.

The wonderful thing about this soup recipe is you make it in the crockpot. You don’t have to do an excessive amount of prep work like some recipes. If you don’t have leftover turkey or turkey broth, simply substitute leftover rotisserie chicken and chicken broth instead.

If you’re looking for a fantastic soup recipe that’s gluten free and made in the crockpot for ease and convenience, I can’t recommend Crockpot Gluten Free Turkey Noodle Soup enough. I made a large pot and was able to have this soup as leftovers for lunches for several days afterwards. It was sooooo good.

I used these ingredients. The large bowl contains homemade turkey broth cooked down from a turkey carcass after Thanksgiving.

Pour broth into crockpot.

Add turkey, carrots, bell peppers, onions, celery, garlic and leeks.

Add seasonings. Cook on low heat for about 4-5 hours.

Add gluten free noodles that have been broken in halves or thirds. Cook about 30 minutes.

Stir in peas and cook and additional 15 minutes.

Garnish with fresh parsley, if desired.

  • 1 large crockpot
  • 1 sharp knife to cut vegetables
  • measuring cups
  • measuring spoons
  • 1 vegetable peeler
  • 1 wooden spoon
  • 1 soup ladle

Ingredients
  

  • 6 cups turkey broth
  • 1 leek green top removed, washed thoroughly and sliced
  • 1 medium onion chopped
  • 1 yellow bell pepper chopped (or any other color)
  • 2 ribs celery diced
  • 2 cloves garlic minced
  • 3 small carrots peeled, sliced
  • 1 cup frozen peas thawed
  • 4 cups turkey chopped
  • 2 tsp. pink Himalayan sea salt
  • 3/4 tsp. ground black pepper (see note)
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary
  • 1 tbsp. dried parsley
  • 8 oz. Ronzoni gluten free thin spaghetti noodles broken in half or thirds

Instructions
 

  • Pour broth into crockpot.
  • Add turkey, leek, onions, bell pepper, celery, garlic, carrots and seasonings.
  • Cook on low heat for about 4-5 hours.
  • Add noodles and cook about 30 minutes or until noodles are tender.
  • Add peas and cook an additional 15 minutes.
  • Check seasonings.
  • Add more if desired.

Notes

NOTE: I enjoy a lot of pepper in my soups, but if you’re not fond of it, I recommend scaling back to about 1/3 to ½ tsp. pepper.
 
NOTE: The noodles will absorb a lot of liquid. You may have to thin the soup with additional water or broth, especially after the soup sits out or is refrigerated.
 
NOTE: Preparation time does not include time required to cook off a turkey carcass and debone meat.

    Can I use chicken broth instead as I don’t have the turkey cacass.?

      Hi, Karen. Absolutely. Chicken and turkey can be switched out for the recipe with any problems whatsoever.
