Crockpot Cock-a-Leekie Soup

Crockpot Cock-a-Leekie Soup is just a delightful recipe. Hi everyone! I hope you had a wonderful Thanksgiving and that you’re enjoying lots of holiday leftovers. 🙂 This is a great recipe to use up some of that leftover turkey. It’s certainly one of those “must-have” recipes when you’re short on time.

You just toss everything into a slow cooker and in about 5 hours on low heat, you have a tasty soup ready to be devoured. Have you ever heard of Cock-a-Leekie Soup? It’s a delicious old-world classic from Scotland using chicken and leeks in a delicious broth that’s usually garnished with prunes.
While I couldn’t bring myself to garnish the soup with prunes, I’ve been wanting to concoct an easy crockpot version of this recipe for months. I think this recipe does the trick. As I said earlier, I think it would taste just as well with leftover turkey.
Crockpot Cock-a-Leekie Soup is ridiculously easy to make. It’s savory and delectable while being a super comfort food this time of the year. Seriously, I used leftover rotisserie chicken, and after chopping up some celery, onions, potatoes, garlic, carrots, and leeks, I added thyme, bay leaves, parsley and chives. I love throwing together soup or chili recipes in the crockpot, because it’s just so easy and convenient.
After we had a serving of this soup for dinner along with some Italian Seven Grain Bread, I sent the rest of the soup and bread to friends who had just moved into a new home and were busy unpacking. They raved over this delightful soup.
If you’ve never used leeks before, you’ve got to give this recipe a try. Leeks taste a little bit like a combination of onions and garlic. Leeks flavor everything spectacularly. They are a terrific veggie that’s wonderful to add to any soup, savory pie or casserole recipe.
Crockpot Cock-a-Leekie Soup makes a filling and satisfying meal that’s healthy, low calorie, gluten free, dairy free and clean eating. Because it’s made in the slow cooker, you can whip this up anytime. Not only is this soup a great way to use up leftover turkey from Thanksgiving, but it’s a way to watch your calories between now and Christmas! While classic Cock-a-Leekie Soup is made with chicken rather than turkey and served garnished with prunes rather than parsley, I think you’ll enjoy this version too.
Crockpot Cock-a-Leekie Soup is delicious old-world fare from Scotland. (My version, however, omits the prunes).

Crockpot Cock-a-Leekie Soup is so easy since it’s made in the crockpot. Just toss everything into the slow cooker and heat for about 5 hours on low, and that’s it!
Here’s what I did.
I used these ingredients.
Cut rotisserie chicken in bite sized pieces. Place in crockpot with potatoes, carrots, celery, leeks, onions, garlic and bay leaf.
Add salt, pepper, thyme, parsley and chicken broth. You can also add fresh, snipped chives here, if you desire.
Cook in crockpot on low for about 5 hours.
You can slice the leeks like I did (remove the green leafy top of the veggie and discard), or you can quarter and slice down the leeks. Either way works fine.
Grind a little fresh pepper on top and sprinkle with fresh parsley or chives.
I found Crockpot Cock-a-Leekie Soup tasted wonderfully with my Italian Seven Grain Bread.

CROCKPOT COCK-A-LEEKIE SOUP
(My own concoction)
Crockpot Cock-a-Leekie Soup
Equipment
- 1 crockpot
- 1 sharp knife to cut vegetables
- 1 vegetable peeler
- measuring cups
- measuring spoons
- 1 wooden spoon
- 1 soup ladle
Ingredients
- 2 cups cooked chicken cubed (I used leftover rotisserie chicken)
- 3 leeks green top removed, washed thoroughly and sliced
- 1 large onion chopped
- 2 cloves garlic minced
- 2 ribs celery sliced
- 3 large potatoes peeled and cubed (Yukon Gold are good)
- 2 large carrots peeled and sliced
- 48 oz. container chicken broth
- 1 tsp. fresh parsley to taste
- 1 tsp. Salt and pepper to taste
- 1 tsp. dried thyme
- 1 large bay leaf or two small bay leaves
- 1 tbsp. fresh, snipped chives for garnish, if desired
- 1 tbsp. fresh parsley for garnish, if desired
Instructions
- Place chicken, leeks, onion, garlic, celery, potatoes, carrots and chicken broth in a large crockpot.
- Add salt and pepper, parsley, thyme and a bay leaf.
- Cook on low about 5 hours.
- Remove bay leaf.
- Remove to individual bowls.
- Garnish with fresh parsley and snipped chives.
